- 2 medium roma tomatoes
- 2 tbsp yellow onion (finely chopped)
- 2 tbsp fresh cilantro (tightly packed)
- 1 clove garlic (crushed)
- 1/3 medium jalapeño pepper
- 1/8 tsp cumin
- salt to taste
- 1/2 cup fire roasted diced tomatoes
- 1/2 tbsp lime juice (freshly squeezed)
Chop the roma tomatoes into large wedges and add them to a food processor.
Finely chop the jalapeño pepper and remove the seeds.
Sauté the chopped onion and crushed garlic in a bit of olive oil over low heat for a few minutes until the onions are translucent.
Add the chopped yellow onion, cilantro, crushed garlic, chopped jalapeño pepper, cumin, diced tomatoes, and lime juice to the food processor.
Pulse the mixture for a few seconds at a time until your desired consistency is achieved.
Add salt to taste.
