Ingredients
1/4
cup
vegan chocolate protein powder
(I used Orgain simple protein powder in the chocolate peanut butter cup flavor)
1 1/2
tbsp
whole wheat flour
1
tbsp
dark chocolate chips
1/4
tsp
baking powder
1/4
cup + 2 tbsp
nut milk
(I used unsweetened vanilla almond milk)
1/2
tbsp
unsweetened applesauce
1/4
tsp
pure vanilla extract
1
tbsp
creamy peanut butter
(for topping)
fresh fruit
(for topping, I used banana slices)
pure maple syrup to taste
(for topping)
Instructions
In a mixing bowl, combine the chocolate protein powder, whole wheat flour, and baking powder.
Add the nut milk, applesauce, and pure vanilla extract.
Mix all ingredients until well combined.
Gently fold in the dark chocolate chips.
Pour dollops of batter onto a greased pan or pancake griddle.
Cook the pancakes for a few minutes on each side. You'll know they are ready to flip when they start to bubble.
Plate your pancakes, then top them with peanut butter, fresh fruit, and pure maple syrup to taste.
Dig in and enjoy!
