Ingredients

  • 1/4 cup vegan chocolate protein powder (I used Orgain simple protein powder in the chocolate peanut butter cup flavor)
  • 1 1/2 tbsp whole wheat flour
  • 1 tbsp dark chocolate chips
  • 1/4 tsp baking powder
  • 1/4 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1/2 tbsp unsweetened applesauce
  • 1/4 tsp pure vanilla extract
  • 1 tbsp creamy peanut butter (for topping)
  • fresh fruit (for topping, I used banana slices)
  • pure maple syrup to taste (for topping)

Instructions

  • In a mixing bowl, combine the chocolate protein powder, whole wheat flour, and baking powder.
  • Add the nut milk, applesauce, and pure vanilla extract.
  • Mix all ingredients until well combined.
  • Gently fold in the dark chocolate chips.
  • Pour dollops of batter onto a greased pan or pancake griddle.
  • Cook the pancakes for a few minutes on each side. You'll know they are ready to flip when they start to bubble.
  • Plate your pancakes, then top them with peanut butter, fresh fruit, and pure maple syrup to taste.
