Ingredients
  

  • 1/2 cup dry quinoa
  • 1/4 cup fresh cilantro (finely chopped)
  • salt to taste
  • 1 cup water
  • 1/2 tbsp freshly squeezed lime juice
  • 1/2 tbsp extra virgin olive oil

Instructions
 

  • Add the quinoa and water to a pot.
  • Cover the pot with the lid and bring the mixture to a boil.
  • Turn the heat to medium-low and cook the quinoa until it is soft, fluffy, and all the water is absorbed, about 10 - 15 minutes.
  • Remove the quinoa from heat, then transfer it to a large mixing bowl.
  • Add in the lime juice and olive oil, and mix well to combine.
  • Add the salt to taste, then mix again.
  • Gently fold in the fresh chopped cilantro.

  • Serve the cilantro lime quinoa with whatever you'd like.
