- 1/2 cup dry quinoa
- 1/4 cup fresh cilantro (finely chopped)
- salt to taste
- 1 cup water
- 1/2 tbsp freshly squeezed lime juice
- 1/2 tbsp extra virgin olive oil
Add the quinoa and water to a pot.
Cover the pot with the lid and bring the mixture to a boil.
Turn the heat to medium-low and cook the quinoa until it is soft, fluffy, and all the water is absorbed, about 10 - 15 minutes.
Remove the quinoa from heat, then transfer it to a large mixing bowl.
Add in the lime juice and olive oil, and mix well to combine.
Add the salt to taste, then mix again.
Gently fold in the fresh chopped cilantro.
Serve the cilantro lime quinoa with whatever you'd like.
