- 12 large pitted medjool dates
- 1/4 cup rolled oats
- 1/2 tsp cocoa powder (plus more for dusting)
- 2 tbsp creamy almond butter (I used Kirkland's)
- 3 - 4 tsp water (as needed, to aid blending)
- optional add-ins: chopped nuts, mini chocolate chips, shredded coconut, chia seeds, etc.
Soak the dates in warm water for about 10 minutes to soften.
Blend all ingredients, except the rolled oats, in a high speed food processor until a sticky consistency is achieved.
Roll the mixture into balls with your hands.
Refrigerate the balls for about 30 - 40 minutes to allow them to firm up a bit.
Place the oats in a small shallow dish.
Roll each date ball in the oats to coat each ball completely.
Dig in and enjoy!
