Ingredients

  • 2 medium fresh apples (I used pink lady apples)
  • 1/4 cup rolled or quick cooking oats
  • 1/4 tsp ground cinnamon
  • 1 tbsp + 1 tsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp + 1 tsp pure maple syrup
  • creamy peanut butter (for drizzling on top)
  • melted coconut oil (for brushing the apples with)

Instructions

  • Preheat the oven to 350° F.
  • Cut the apples in half lengthwise.
  • Remove the core and seeds from each apple half.
  • Place the apples face up on a baking sheet.
  • Brush the outside of each apple half completely with melted coconut oil.
  • In a small bowl, combine the oats, cinnamon, pure maple syrup, and nut milk.
  • Spoon the oat mixture into the apple crevices, making sure to distribute it evenly between all of the apple halves.
  • Bake the apples for about 30 minutes, or until your desired softness is achieved (you can poke the apples with a fork to see how soft they are inside).
  • Let the apples cool for a bit, then drizzle on the creamy peanut butter.
  • Dig in and enjoy!
