Good morning everyone! Today, I am so excited to share an easy vegan salad recipe that I have been eating on repeat for lunch recently. As you all know, I love loaded salad and nourish bowls. However, they have to be packed with flavor. I simply don’t enjoy a bland, flavorless salad (honestly, who does?).
Fortunately, the salad recipe that I am going to share with all of you today is loaded with flavor and nutrients. It is the perfect recipe to whip up when you don’t have a lot of time for lunch. It is quick and easy to make, and it’s also budget friendly. Plus, you can customize it to your own personal taste by adding various toppings to your salad bowl. Now, enough on that. Let’s go through the entire list of ingredients you will need to make this easy vegan tofu and sweet potato salad.
Easy Tofu Sweet Potato Salad – Ingredients
- Greens of Choice – The first ingredient you will need for this recipe are the leafy greens. You can use whichever kind you prefer or have on hand. I like to use spinach or some sort of spring mix for this recipe. On the day I photographed this salad, I chose baby spinach for my salad base.
- Sweet Potato – The sweet potato is another key ingredient you will need for this recipe. It adds flavor and color to this delicious salad bowl. You will want to prep this ingredient in advance so that you can chill it in the refrigerator before adding it to your salad. You can either bake it in the oven or the microwave if you want a quicker option. Regardless, the sweet potato is an essential ingredient that you will need for this salad recipe.
- Tofu – The tofu adds a nice source of plant-based protein to this salad. You will want to fry it up in a pan with a bit of olive oil for about 5 – 10 minutes until it is crispy and golden brown. The oil will also add a bit of flavor to the tofu. Tofu tends to absorb the flavor of whatever you soak or cook it in. Alternatively, you could air fry your tofu if you want it to be extra crispy. Again, this is an ingredient that you will want to prep in advance so that it can be chilled in the refrigerator before you add it to your salad.
- Salsa – The salsa is another essential ingredient which adds a ton of flavor to the salad. I used a fresh salsa that I bought from my local grocery store, but you can use whichever kind you like. If you don’t have salsa, you could substitute chopped tomatoes. Or, you could even make your own homemade salsa from scratch if you’d prefer.
- Pepitas – Another key ingredient you will want for this salad recipe are the shelled pumpkin seeds, also known as pepitas. Pepitas are one of my absolute favorite seeds. They have a delicious flavor and a nice crunchy texture. They pair really nicely with all of the other ingredients present in this recipe. Plus, they add some nice color to the salad. They will be sprinkled right on top of your salad bowl.
- Corn – The corn adds some color and sweetness to this tofu and sweet potato salad. The corn pairs amazingly well with cooked sweet potato, so it is the perfect addition to this tasty vegan salad recipe.
- Nutritional Yeast Seasoning – The nutritional yeast seasoning will be sprinkled on top of your salad for even more flavor. It adds a slight nutty/cheesy flavor to the salad, plus it supplies some vitamin B12 to the meal.
- Dressing – The dressing is the final finishing touch for this vegan tofu and sweet potato salad. You can use whichever kind of dressing you would like for this recipe. However, I highly recommend a tahini based one. Lemon tahini dressing is one of my favorites, and it pairs really well with this salad in particular.

Ingredients
- 1/2 cup tightly packed spinach (can sub any other leafy greens)
- 1/2 cup cooked, cubed, and chilled sweet potato (with skin removed, if desired)
- 1/2 cup cooked, cubed, and chilled tofu
- 2 tbsp corn
- 1 tbsp fresh salsa (can sub chopped tomatoes)
- 1 tbsp pepitas (I used lightly salted)
- 1 tsp nutritional yeast seasoning (optional, for topping)
- 2 tbsp dressing of choice (I used vegan tahini dressing)
