Good morning everyone! Today, I am so excited to share a simple and delicious vegan treat. As you guys know, one of my absolute favorite desserts is cake. Specifically, I have always enjoyed chocolate cake. Even as a little girl, I always chose chocolate cake when given the option. Many of my friends would have a split cake at their birthday parties that was half chocolate and half vanilla, and I always went for a chocolate piece.

Anyway, back to today’s recipe. As you guys know, I love making single serve treats that come together in just minutes. At the end of a long workday, I like to whip up a treat that’s uncomplicated yet delicious. That’s why I love mug cakes so much. This chocolate and banana protein mug cake is one of my new favorite flavors, and it’s made with just a few ingredients.

Also, it’s super customizable. You can top it with your favorite chocolate frosting recipe, drizzle it with peanut butter and chocolate chips (that’s what I did), or serve it up with some vegan vanilla ice cream. I have always loved the combination of chocolate cake and vanilla ice cream. The point is that the possibilities are endless with this recipe. Once you have the base, you can add whatever you want.

What Can I Use Instead of Cocoa Powder in a Mug Cake?

If you are trying to make a rich chocolate mug cake, but you want to boost the protein content (or you simply don’t have cocoa powder on hand), you can easily use chocolate protein powder. This is exactly what I did to make this vegan chocolate banana mug cake. In addition to that, you can add chocolate chips on top for even richer chocolate flavor. The chocolate protein powder, in combination with the oat flour, serves as the perfect dry base for your protein cake batter.


Why Does My Mug Cake Taste Bitter?

If your mug cake tastes bitter, you probably didn’t use a sweet enough protein powder, or you used very dark chocolate (which has a much more bitter taste). To combat this, you can easily add a liquid sweetener on top of your mug cake, such as pure maple syrup, or add some semi-sweet chocolate chips. If you want to add cocoa powder to your mug cake, you will definitely want to add some sort of sweetener, since cocoa powder doesn’t have any sweetness to it.


Moist Banana Chocolate Protein Cake – Ingredients

  • Quick Oats – The first ingredient you will need for this recipe is quick oats. You will be blending the oats up to form a fine oat flour. If you don’t have quick oats, you could easily sub rolled oats.
  • Vegan Chocolate Protein Powder – The next ingredient you will want for this recipe is the chocolate protein powder. I used the Orgain Simple protein powder in the chocolate peanut butter cup flavor.
  • Banana – The third ingredient you will want for this recipe is the ripe or overripe banana. This ingredient will be mashed up and added to your mug cake batter to provide a source of moisture and sweetness. I love the flavor combination of chocolate and banana. Since we only use a little bit of banana in this recipe, the flavor doesn’t overpower the chocolate. It’s the perfect little addition to the cake batter.
  • Water – The water serves as the key source of liquid for this chocolate banana protein mug cake recipe.
  • Peanut Butter – The peanut butter serves as one of the key toppings for this mug cake. It adds richness and flavor. You can easily sub this out for another nut or seed butter if you prefer.
  • Chocolate Chips – The chocolate chips add sweetness and rich chocolate flavor to this recipe. I used dark chocolate chips, but you can use whichever kind you have on hand or prefer.

Ingredients
  

  • 2 tbsp quick oats (blended into a fine oat flour)
  • 1 scoop chocolate protein powder (1 scoop = 19 grams, I used Orgain Simple in the chocolate peanut butter cup flavor)
  • 1/4 medium ripe banana (mashed)
  • 4 1/2 tbsp water
  • 1 tbsp creamy peanut butter
  • 1 tbsp dark chocolate chips

Instructions
 

  • In a small bowl, mix together the oat flour and protein powder.
  • Add the mashed banana and water and mix again to form a smooth cake batter.
  • Pour the cake batter into a microwave safe mug or ramekin.
  • Microwave the cake until firm, about 90 seconds.
  • Top the mug cake with the peanut butter and chocolate chips.
  • Let the mug cake cool for a bit, then dig in and enjoy!
