Good morning friends! As we are slowly moving into the warmer summer months, I thought it would be fun to start sharing some of my favorite summer treats, like creamy vegan ice cream. Ice cream is especially tasty during the warm summer months because it is cool, creamy, and refreshing. Fortunately, it’s super easy to make your own vegan banana ice cream at home from scratch. The recipe that I’m going to share with all of you today is one of my favorite flavors of banana ice cream – peanut butter!

Peanut butter is one of my favorite foods of all-time, so naturally, I had to try and infuse it into a vegan ice cream recipe. The end result was the delicious, creamy, refreshing ice cream recipe that I’m about to share with all of you today. So, without further ado, let’s dive into the full list of ingredients you will need to make this vegan peanut butter ice cream recipe a smashing success!


Easy Vegan Peanut Butter Ice Cream – Ingredients

  • Frozen Bananas – The first ingredient that you will need for this recipe is, unsurprisingly, the frozen banana chunks. After all, you can’t make creamy vegan banana ice cream without them. You will want to peel and freeze them when they are ripe/overripe for optimal sweetness. If the peels are yellow with brown spots, they are perfect to freeze and use in this vegan peanut butter ice cream recipe. Once they are blended up in the food processor with a few other key ingredients, they will transform into a smooth and creamy ice cream consistency.
  • Powdered Peanut Butter – The powdered peanut butter is another essential ingredient that you will need for this recipe. This ingredient adds creaminess, sweetness, and a ton of peanut butter flavor to the base of your vegan ice cream. Of course, we will be elevating that flavor even more with a peanut butter drizzle. Still, the powdered peanut butter is a key ingredient that you definitely don’t want to omit. Plus, it sneaks some protein into this tasty vegan ice cream.
  • Creamy Peanut Butter – The creamy peanut butter adds a ton of richness and peanut butter flavor to this vegan banana ice cream. It pairs perfectly with the other ingredients present in this recipe. I like to use natural peanut butter for a super drizzly consistency. Also, I use salted peanut butter, and I really like the depth of flavor that the saltiness from the peanut butter provides this vegan ice cream with.
  • Non-Dairy Milk – The final ingredient you will need for this recipe is the non-dairy milk. I used unsweetened vanilla almond milk, but you can use whichever kind you prefer or have on hand. This ingredient adds creaminess to the ice cream, and it also helps aid blending. A little bit goes a long way. We don’t want to overdo it with this ingredient, because using minimal liquid is the key to achieving the thickest, creamiest consistency possible.
  • Optional Toppings – In addition to the peanut butter drizzle, there are many different toppings you can add on top of your peanut butter ice cream. Some of them include chocolate chips, sprinkles, chopped walnuts, melted chocolate, etc. The possibilities are endless, so don’t be afraid to get creative with your toppings.

Ingredients
  

  • 3 medium ripe bananas (frozen in chunks)
  • 1/4 cup powdered peanut butter
  • 2 tbsp creamy peanut butter
  • 2 tbsp non-dairy milk (I used unsweetened vanilla almond milk)

Instructions
 

  • Add the frozen bananas, powdered peanut butter, and non-dairy milk to a high speed food processor.
  • Blend until a smooth and creamy consistency is achieved, stopping to move the mixture around as necessary to aid blending.
  • Transfer the peanut butter ice cream to a serving bowl.
  • Drizzle the peanut butter on top of the ice cream.
  • Dig in and enjoy!
