Easy Vegan Chocolate Chunk Brownies
Good morning friends! Today, I was in the mood to bake something chocolatey. I had no idea what to make at first. However, I quickly realized that I haven’t made brownies in a bit. So, I thought it would be the perfect dessert to make today. And I know that there is a huge debate about whether cakey or fudgy brownies are superior. I personally love both. Today, I decided to go with fudgy brownies. They turned out moist, sweet, and delicious. So, I thought I’d share the recipe on my blog.
Now, let’s go through some quick things to note for this recipe. Then, we will dive into the list of ingredients you will need to make these vegan chocolate chunk brownies.
What Kind Of Chocolate Do These Brownies Require?
These vegan chocolate brownies require two key ingredients to achieve a rich and decadent chocolate flavor – cocoa powder and chocolate chunks/chips. For this recipe, I used some vegan dark chocolate chunks. However, you can use whichever kind you’d like. For an even sweeter chocolate flavor, you could substitute semi-sweet chocolate chips.
A few of my favorites are the enjoy life brand vegan dark chocolate chunks and morsels, as well as the enjoy life brand mini semi-sweet chocolate chips. Whole Foods also has a few good vegan options for chocolate chips.
How Do You Make Vegan Brownies At Home?
Making vegan and gluten free friendly brownies at home is actually much easier than you might expect. With this recipe specifically, I used super simple ingredients that I already had in my refrigerator and pantry. In order to make the brownies gluten free friendly, I chose to use gluten free flour and oat flour for the dry base.
In order to make the brownies vegan, I used a combination of nut milk, pure maple syrup, and mashed bananas for moisture. I also used baking powder as the leavening agent so that the brownies would turn out nice and fluffy. With these simple swaps, you can easily make your brownies vegan and gluten free friendly (just make sure to use gluten free oats).

Vegan Chocolate Chunk Brownies – Ingredients
- Gluten Free Flour – The gluten free flour is the first key ingredient you will need to make these brownies. This ingredient serves as one of the essential dry ingredients which forms the bulk of the dry brownie mix. I used King Arthur brand 1-for-1 gluten free flour.
- Oat Flour – The oat flour combines perfectly with the other dry ingredients to form the brownie mix base. You can make your own by blending up rolled oats for a few minutes to form a fine oat flour.
- Cocoa Powder – The cocoa powder is another key ingredient you will need to make these chocolate chunk brownies. After all, you can’t make delicious and decadent chocolate brownies without the cocoa powder.
- Baking Powder – The baking powder acts as the leavening agent which helps these brownies rise. It also ensures that the brownies don’t turn out too dense.
- Bananas – The overripe bananas will be mashed and added to the brownie batter to add sweetness and a ton of moisture. This is a key ingredient that you definitely don’t want to forget. If the banana peels are yellow with brown spots, they are perfect to use for sweet recipes such as this one.
- Nut Milk – The nut milk adds creaminess and moisture to the brownie batter.
- Pure Maple Syrup – The pure maple syrup adds even more sweetness and moisture to the chocolate chunk brownies. It is a great addition to this recipe.

Easy Vegan Chocolate Chunk Brownies
Ingredients
- 1/2 cup 1-for-1 gluten free flour (I used King Arthur)
- 1/2 cup rolled oats (blended into a fine oat flour)
- 2 tbsp cocoa powder
- 1/2 tsp baking powder
- 2 medium overripe bananas (thoroughly mashed)
- 1/2 cup nut milk (I used unsweetened vanilla almond milk)
- 2 tbsp pure maple syrup
- 2 tbsp vegan dark chocolate chunks
Instructions
- Preheat the oven to 350° F.
- In a large mixing bowl, combine the gluten free flour, oat flour, cocoa powder, and baking powder.
- Add the mashed bananas, nut milk, and pure maple syrup.
- Mix again to form a brownie batter consistency.
- Pour the brownie batter into a lined/greased square or rectangular pan.
- Top the brownie batter of with the chocolate chunks.
- Bake the brownies for about 25 minutes, or until a toothpick inserted comes out clean.
- Let the brownies cool completely before cutting them into 8 squares.
- Dig in and enjoy!
