Easy Vegan Chocolate Chunk Brownies

Delicious vegan chocolate chunk brownies that are ultra moist and packed with flavor.

Ingredients
  

  • 1/2 cup 1-for-1 gluten free flour (I used King Arthur)
  • 1/2 cup rolled oats (blended into a fine oat flour)
  • 2 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 2 medium overripe bananas (thoroughly mashed)
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 2 tbsp pure maple syrup
  • 2 tbsp vegan dark chocolate chunks

Instructions
 

  • Preheat the oven to 350° F.
  • In a large mixing bowl, combine the gluten free flour, oat flour, cocoa powder, and baking powder.
  • Add the mashed bananas, nut milk, and pure maple syrup.
  • Mix again to form a brownie batter consistency.
  • Pour the brownie batter into a lined/greased square or rectangular pan.
  • Top the brownie batter of with the chocolate chunks.
  • Bake the brownies for about 25 minutes, or until a toothpick inserted comes out clean.
  • Let the brownies cool completely before cutting them into 8 squares.
  • Dig in and enjoy!
