The weekend always provides me with a little bit of relief, as I have more time for my passions and hobbies. And as you guys know, I absolutely love to cook and bake.
However, it’s not feasible for me to make anything elaborate during the work week. So, on busy workdays, I rely on quick and simple dessert options. After all, I’m not one to skip dessert. With that being said, the three delicious desserts that I’m going to share in this post are not only insanely easy to make, but they also taste delicious. Now, let’s take a look at the three recipes, which includes a simple and delicious peanut butter banana chocolate chip nice cream, a vegan chocolate peanut butter protein mug cake, and a decadent chocolate avocado pudding.

1. Banana Chocolate Chip Nice Cream
This banana nice cream recipe is perfect for summer. It’s thick, creamy, and super customizable. You can add whatever toppings you’d like to create a truly unique flavor combination. Some of my favorite toppings include chocolate chips, peanut butter, coconut flakes, chopped nuts, and the list goes on. The possibilities are literally endless. Today, we are going to make my classic chocolate chip banana nice cream version.
Banana Chocolate Chip Nice Cream – Ingredients
- Frozen Bananas – The frozen bananas are the first essential ingredient you will need to make this thick and creamy nice cream. The riper the bananas are when you freeze them, the sweeter this vegan ice cream will be.
- Nut Milk – The nut milk serves as the key source of liquid to aid blending and add creaminess to this vegan nice cream.
- Vegan Chocolate Chips – The vegan chocolate chips add sweetness, rich chocolate flavor, and a nice crunchy topping to this vegan banana nice cream.
Banana Chocolate Chip Nice Cream
Ingredients
- 2 medium ripe bananas (frozen in chunks)
- 2 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1 tbsp vegan chocolate chips (I used Enjoy Life mini chocolate chips)
Instructions
- Add the frozen banana chunks and nut milk to a high speed blender or food processor.
- Blend for a couple minutes until smooth, stopping to scrape down the sides as necessary to aid blending.
- Transfer the banana ice cream to a serving dish.
- Top the ice cream with the chocolate chips.
- Dig in and enjoy!

The next recipe we will be making is a simple and delicious chocolate peanut butter protein mug cake. As you can see, there is a little bit of a chocolate theme developing here. This chocolate protein mug cake takes only 60 seconds to bake, and it turns out light, fluffy, and super sweet. All you have to do is mix together the three base ingredients and pop the mug cake in the microwave to cook. - Water – The final base ingredient you’ll need for this recipe is the water, which acts as the source of liquid.

Chocolate Peanut Butter Protein Mug Cake
Ingredients
- 1 scoop chocolate protein powder (1 scoop = 19 grams, I used Orgain simple protein powder)
- 3 tbsp quick oats (blended into a fine oat flour)
- 1/4 cup water
- 1 tbsp peanut butter (for topping)
Instructions
- In a small microwave safe dish or mug, mix together the protein powder and oat flour.
- Add the water and mix again to form a smooth cake batter.
- Microwave the mug cake for 60 seconds.
