These oatmeal bars are so easy to make, they are budget friendly, and they taste amazing. They are perfect for the summer time since peaches are in-season right now :). I love to eat these bars for breakfast, an afternoon snack, or an easy dessert. I like to top mine with a drizzle of creamy peanut butter and some vegan coconut whipped cream, but you can add whatever you’d like on top of yours. How To Make Peach Oatmeal Bars
Making my vegan and gluten free friendly peach oatmeal bars requires just a few simple steps. You will start by blending up some rolled oats to form a fine oat flour. To make these oatmeal bars gluten free, make sure to use your favorite gluten free rolled oats. Then, you will add the oat flour to a mixing bowl with a few other key ingredients, like cinnamon and leavening agents.
After mixing up all the dry ingredients, you will add the liquid ingredients and mix again to form a smooth oatmeal batter. You’ll fold in some fresh chopped peach pieces (and add even more on top). Then, you will bake the bars until firm. It’s as simple as that!

- 1 cup rolled oats (blended into a fine oat flour)
- 1 fresh peach
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup + 1 tbsp nut milk
- 2 tbsp creamy peanut butter
- 2 tbsp pure maple syrup
Instructions
- In a large mixing bowl, combine the oat flour, cinnamon, baking powder, and baking soda.
- Blend the nut milk with 1/4 of the fresh peach and a few dashes of cinnamon until smooth.
- Make a well in the center of the mixing bowl, then add the peach milk, peanut butter, and pure maple syrup.
- Mix the liquid ingredients well to combine.
- Slowly mix the wet ingredients into the dry to form a smooth oatmeal batter.
- Chop up the remaining 3/4 peach.
- Gently fold in the peach pieces, reserving about 1/4 peach to top the peach oatmeal bars with.
- Top the oatmeal bars with the remaining 1/4 peach.
- Bake the peach oatmeal bars for about 30 minutes, or until a toothpick inserted comes out clean.
- Let the peach bars cool completely before cutting them into six rectangular bars.
