What to Make a Vegan for Thanksgiving

Good morning friends! It is two days until Thanksgiving as I write this post, and I am guessing that some of you are scrambling to finalize your Thanksgiving Day spread (I know I am). I am really excited to be making a lot of the Thanksgiving Day side dishes for my family this year. I will be making cornbread muffins, roasted Brussels sprouts, baked sweet potatoes, and even a vegan pumpkin pie.

While I know that most people are not vegan, some of you might be looking for some vegan side dishes to serve this Thanksgiving. Whether you are cooking up a dish for one of your vegan friends or family members, you are plant based yourself, or you simply want a dairy free dish to add to your Thanksgiving Day spread, I hope you find this post helpful. Anyway, enough on that. Let’s go through a few easy vegan dishes you can make this Thanksgiving.

Easy Vegan Stuffing Recipe Hack

This easy vegan stuffing recipe is not really a recipe at all. It is essentially a simple hack which you can use to make vegan stuffing quickly and easily. All you have to do is buy a vegan stuffing mix from your local grocery store, and then jazz it up a bit. Make sure to check the ingredients list on whichever bag of stuffing you choose, as they aren’t all vegan. Once you have your vegan stuffing mix, you will add vegetable broth, fresh carrots, fresh celery, yellow onion, and minced garlic to the mix. You’ll bake it up for optimal texture and flavor. If you need to make some vegan stuffing quickly and easily, this recipe is for you.

Easy Baked and Stuffed Acorn Squash

In my family, we can’t have a vegan Thanksgiving without some type of squash making it’s way onto our table. This baked and stuffed acorn squash recipe is packed with flavor and plant based nutrients. The filling is good on its own, but it is incredible when stuffed into a fresh baked acorn squash. It’s a delicious recipe that I think vegans and non-vegans alike will enjoy.

Best Easy Mashed Cauliflower Recipe

Don’t get me wrong, I love mashed potatoes. Every year, my family has mashed potatoes on Thanksgiving, and I always fill my plate with a generous helping. However, I also really enjoy the taste and texture of mashed cauliflower. So, if you are interested in giving it a try, you can find the easy mashed cauliflower recipe on my blog here.

Easy Vegan Cornbread

This vegan cornbread recipe is a huge hit with my family every single year. In fact, I usually make two pans of it because everyone always wants seconds (and thirds) of this dish. My cornbread recipe is completely vegan (of course), super moist, sweet, and delicious. This just goes to show that you can make a really tasty vegan side dish with the right combination of ingredients. This cornbread pairs really nicely with vegan butter as well. It tastes best served fresh and warm. It’s also one of my personal favorite side dishes which I look forward to making (and eating) each and every year.

Easy Vegan Crustless Pumpkin Pie

You didn’t think I would forget about dessert, did you? This easy vegan pumpkin pie recipe is simple, sweet, and perfect served up with vegan vanilla ice cream or coco whip. It is sweetened with pure maple syrup and tastes best when served after refrigerating it overnight to firm up.

For many years, my favorite Thanksgiving dessert has been pumpkin pie. I know that not everyone enjoys pumpkin pie, but I absolutely love it. I prefer mine chilled, but I know some people like their pie warm.

Easy Chocolate Silk Pie

While this vegan chocolate silk pie recipe might be made with tofu, you wouldn’t know it based on the texture and taste. This pie is chocolatey, rich, decadent, and insanely tasty. So, if you are feeling a bit adventurous, don’t be afraid to give this recipe a go. I think you will be very pleasantly surprised. Plus, if you want it sweeter, you can always add extra melted chocolate.
