I made these muffins last week and they were so good that I decided to make them again this week. So, I figured I should share this recipe on the blog so all of you can enjoy them too!

Peanut Butter Chocolate Chip Banana Muffins
Ingredients
- 1 1/2 cup rolled oats (blended into a fine oat flour)
- 2 tbsp coconut sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 1/2 medium overripe banana (thoroughly mashed)
- 1/2 cup nut milk (I used unsweetened vanilla almond milk)
- 3 tbsp creamy peanut butter
- 1 tbsp pure maple syrup
- 1 – 2 tbsp chocolate chips (I used semi-sweet chocolate chips)
Instructions
- Preheat the oven to 350° F.
- In a large mixing bowl, combine the oat flour, coconut sugar, baking powder, and baking soda.
- Make a well in the center of the bowl, then add the mashed banana, nut milk, peanut butter, and pure maple syrup.
- Mix well to combine.
- Pour dollops of batter into seven cavities of a lined or greased muffin pan.
- Top the muffins off with the chocolate chips.
- Pop the muffins in the oven to bake for about 25 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool for a bit before removing them from the pan.
- Dig in and enjoy!
