Good morning friends! Today, I am so excited to share my tasty cowboy caviar chip dip recipe. This recipe was inspired by the cowboy caviar salsa sold at Trader Joe’s, but mine has a special twist. While it does contain some of the common ingredients found in traditional cowboy caviar, such as corn and peppers, I have put my own unique touch on it.
Still, this recipe retains that delicious spice, so I hope you all enjoy it as much as I do. If desired, you can decrease the overall spiciness of the cowboy caviar by omitting the jalapeño pepper and the chili powder.
My absolute favorite way to serve this dip is with some classic tortilla chips. However, it also tastes great on top of burrito bowls, salads, etc. Anyways, enough on that. Let’s dive into some quick things to note for this recipe, as well as the list of ingredients you will need to make this cowboy caviar a smashing success.
What Is Cowboy Caviar Made Of?
Cowboy caviar is traditionally made of beans, tomatoes, corn, peppers, onion, and other optional add-ins such as fresh lime juice. My cowboy caviar is pretty standard as it includes all of these ingredients, with a few additions such as chili powder for an extra little kick.
If you have ever tried the Trader Joe’s cowboy caviar salsa, this is similar in that it has many of the same key base ingredients. However, mine doesn’t have as thick of a conistency and it is more spoonable. The Trader Joe’s version is much thicker and more spreadable, and I also think it’s a bit spicier.
Either way, this cowboy caviar is made of many fresh, healthy, and tasty ingredients that I think you guys are really going to love. When you serve this dip with tortilla chips, it makes for the perfect savory snack.
How Do You Store Cowboy Caviar?
I like to store my cowboy caviar in an airtight container in the refrigerator. I try to eat it within a few days since avocado tends to get mushy and brown pretty quickly. I usually have no issues eating it up fairly quickly because it is super versatile. It makes a great addition to many different meals such as burritos, burrito bowls, salads, nourish bowls, etc.

- Black Beans – The first essential ingredient you will need for this recipe is a can of black beans. You will want to drain and rinse them thoroughly before adding them to your mixing bowl.
- Tomatoes – You will also want some finely chopped tomatoes for this recipe. I used cherry tomatoes on the day that I photographed this recipe because that is all I had on hand, but you can also use roma tomatoes.
- Red Bell Pepper – The red bell pepper is another delicious plant based ingredient that is used in this cowboy caviar.
- Yellow Onion – I can never have a salsa recipe without some yellow onion. This recipe is no exception.
- Avocado – The avocado adds richness, creaminess, and a source of fat to this recipe.
- Jalapeño Pepper – The jalapeño pepper adds a spicy kick to this recipe. You will want to remove the seeds before chopping it up and throwing it into the mixture. For a milder cowboy caviar, you could omit this ingredient completely or replace it with additional bell pepper.
- Corn – The sweet yellow corn adds delicious sweetness and flavor to this cowboy caviar.
- Fresh Lime Juice – The fresh lime juice adds a ton of flavor to this cowboy caviar.
- Garlic – Fresh garlic is one of my favorite ingredients to use in savory recipes. You’ll want to press it with a garlic press before adding it to your cowboy caviar.
- Chili Powder – The chili powder adds some more spice to this delicious cowboy caviar recipe. A little bit definitely goes a long way.
- Salt + Pepper – The salt and pepper will be added to taste for additional flavor in this recipe.

Easy Cowboy Caviar With Avocado
Ingredients
- 1 can black beans (1 can = 15.25 oz, drained and rinsed)
- 1 medium red bell pepper (finely chopped with seeds removed)
- 1 medium jalapeño pepper (finely chopped with seeds removed)
- 1/2 medium avocado (finely chopped)
- 1/2 cup sweet yellow corn
- 1/2 cup tomatoes (finely chopped)
- 1/2 cup yellow onion (finely chopped)
- 1 clove fresh garlic (pressed)
- 1/8 tsp chili powder
- salt (to taste)
- pepper (to taste)
- juice of 1/2 a lime (freshly squeezed)
Instructions
- Add all ingredients, except the salt and pepper, to a bowl.
- Mix all ingredients well to combine.
- Add salt and pepper to taste, as well as additional lime juice if desired.
- Mix again.
- Dig in and enjoy!
