- 1 can black beans (1 can = 15.25 oz, drained and rinsed)
- 1 medium red bell pepper (finely chopped with seeds removed)
- 1 medium jalapeño pepper (finely chopped with seeds removed)
- 1/2 medium avocado (finely chopped)
- 1/2 cup sweet yellow corn
- 1/2 cup tomatoes (finely chopped)
- 1/2 cup yellow onion (finely chopped)
- 1 clove fresh garlic (pressed)
- 1/8 tsp chili powder
- salt (to taste)
- pepper (to taste)
- juice of 1/2 a lime (freshly squeezed)
Add all ingredients, except the salt and pepper, to a bowl.
Mix all ingredients well to combine.
Add salt and pepper to taste, as well as additional lime juice if desired.
Mix again.
Dig in and enjoy!
