Good morning friends! Today, I am so excited to share my unique, tasty, and simple recipe for vegan gingerbread cookies. However, this is not your standard gingerbread cookie recipe. It is actually specially designed to make into a gingerbread cookie cereal!

Basically, I made a gingerbread cookie dough from scratch, used a miniature cookie cutter to make teeny tiny gingerbread men, baked the cookies until they were slightly firm, and then poured them into a bowl with some almond milk. I ate them straight from the bowl with a spoon, and they had a delicious, slightly soft texture and sweet taste.

This recipe was inspired by all the viral TikToks I saw last year for things like miniature pancake cereal, miniature croissant cereal, miniature chocolate chip cookie cereal, etc. Also, quick side note – if you aren’t following me on Tik Tok, you should be! And although gingerbread cookie cereal might not be everyone’s cup of tea, I think it is a super fun, sweet, tasty, and festive holiday treat. Keep in mind that these cookies are made to be super crunchy. If you do decide to make them, definitely soak them in nut milk as you eat them to soften them up!

Ingredients
  

  • 1/2 cup rolled oats (blended into a fine oat flour)
  • 1/4 cup + 1 tbsp whole wheat pastry flour (I used Bob's Red Mill)
  • 1 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1/4 tsp baking soda
  • 3 tbsp pure maple syrup
  • 1 tbsp melted coconut oil
  • 1/2 tbsp molasses

Instructions
 

  • Preheat the oven to 350° F.
  • Add all dry ingredients to a mixing bowl and mix to combine thoroughly.
  • Make a well in the center of the bowl and add all liquid ingredients.
  • Mix all liquid ingredients until well incorporated.
  • Slowly mix in the dry ingredients to form a thick gingerbread cookie dough.
  • Lightly flour a flat, even surface.
  • Roll your cookie dough out to about 1/8 – 1/4 inch thick.
  • Cut your cookie dough into gingerbread shapes using a miniature cookie cutter.
  • Place the cookies on a lined or greased baking sheet with a bit of space between each one.
  • Refrigerate the cookies for about 30 minutes before popping them in the oven to bake.
  • Bake the cookies for about 8 minutes, or until the edges are slightly golden brown (the cookies should still be soft to the touch, as they will firm up as they cool).
