When I was little, I always thought oatmeal looked unappetizing. As I got older, I learned how to jazz it up with add-ins to make it taste delicious. Plus, oats themselves are packed with plant based nutrients. If you make your own baked oats recipe from scratch, you can make it extremely flavorful and satisfying. This recipe is proof that oatmeal doesn’t have to be bland and flavorless.


Are Baked Oats Supposed to Be Gooey?

I often get asked whether or not baked oats are supposed to be gooey, and for that I don’t really have a clear cut answer. It really comes down to personal preference. Baked oats are commonly made in one of two ways. They are either baked a bit longer to achieve a fluffy, cakey texture, or they are baked for a bit less time, until they are firm on the outside and gooey in the middle.

Since this recipe has chocolate in it, the chocolate melts to provide a somewhat gooey texture. However, the baked oats themselves can still retain that fluffy, cake-like texture if that’s what you’re going for. You can really make any baked oats recipe more or less gooey by adjusting the bake time and/or temperature.

  • Cocoa Powder – Cocoa powder is another key ingredient that give the baked oats base that rich chocolate flavor. I used Hershey’s special dark cocoa powder.
  • Semi-Sweet Chocolate Chips – The vegan semi-sweet chocolate chips add some decadent chocolate flavor as well as some sweetness to this baked oats recipe.
  • Baking Powder – Baking powder acts as the key leavening agent in this recipe to ensure your baked oats turn out nice and fluffy. It is an important ingredient that you definitely don’t want to forget.
  • Miniature Candy Cane – The crushed mini candy cane adds a nice crunchy topping as well as some additional peppermint flavor to the baked oats. You will want to add this ingredient on top of your oatmeal after it bakes so that it doesn’t completely melt.

Ingredients
  

  • 1/2 cup quick oats
  • 1/2 tbsp semi-sweet chocolate chips
  • 1/2 miniature candy cane (crushed, for topping)
  • 1 tsp cocoa powder (I used Hershey's special dark)
  • 1/4 tsp baking powder
  • 1/4 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp unsweetened applesauce
  • 1/2 tbsp pure maple syrup
  • 1/4 tsp pure peppermint extract

Instructions
 

  • Preheat the oven to 350° F.
  • Add all ingredients, except the candy cane and chocolate chips, to a high speed blender or food processor.
  • Blend until a smooth batter consistency is achieved.
  • Pour the oatmeal mixture into an oven safe ramekin.
  • Top the mixture with the chocolate chips.
  • Bake the oatmeal mixture for about 15 – 20 minutes, or until your desired consistency is achieved.
  • Pull the oatmeal out of the oven and top it off with the crushed candy cane pieces.
