Ingredients
  

  • 1/2 cup quick oats
  • 1/2 tbsp semi-sweet chocolate chips
  • 1/2 miniature candy cane (crushed, for topping)
  • 1 tsp cocoa powder (I used Hershey's special dark)
  • 1/4 tsp baking powder
  • 1/4 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp unsweetened applesauce
  • 1/2 tbsp pure maple syrup
  • 1/4 tsp pure peppermint extract

Instructions
 

  • Preheat the oven to 350° F.
  • Add all ingredients, except the candy cane and chocolate chips, to a high speed blender or food processor.
  • Blend until a smooth batter consistency is achieved.
  • Pour the oatmeal mixture into an oven safe ramekin.
  • Top the mixture with the chocolate chips.
  • Bake the oatmeal mixture for about 15 - 20 minutes, or until your desired consistency is achieved.
  • Pull the oatmeal out of the oven and top it off with the crushed candy cane pieces.
