- 1/2 cup quick oats
- 1/2 tbsp semi-sweet chocolate chips
- 1/2 miniature candy cane (crushed, for topping)
- 1 tsp cocoa powder (I used Hershey's special dark)
- 1/4 tsp baking powder
- 1/4 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1 tbsp unsweetened applesauce
- 1/2 tbsp pure maple syrup
- 1/4 tsp pure peppermint extract
Preheat the oven to 350° F.
Add all ingredients, except the candy cane and chocolate chips, to a high speed blender or food processor.
Blend until a smooth batter consistency is achieved.
Pour the oatmeal mixture into an oven safe ramekin.
Top the mixture with the chocolate chips.
Bake the oatmeal mixture for about 15 - 20 minutes, or until your desired consistency is achieved.
Pull the oatmeal out of the oven and top it off with the crushed candy cane pieces.
Let the oatmeal cool for a bit.
