Good morning friends! Today’s recipe is one that I have been meaning to make for so long. I finally got around to writing out and testing my own version of baked apples last weekend, and it definitely did not disappoint. This recipe is vegan (of course!), and it also can be made gluten free by using gluten free oats.
This recipe is sweetened with pure maple syrup to provide the perfect amount of extra sweetness. I love the soft texture that the apples achieve through the baking process. Plus, baking the apples at high heat brings out the sweetness in them even more.
While some baked apples recipes do not include an oat crumble topping, I wanted mine to have that extra crunchy topping. The crumble is almost like a homemade granola, and it includes pure maple syrup and cinnamon for extra flavor and spice.

- Fresh Apples – The fresh apples are the first ingredient you will need for this recipe. This ingredient does not come as a surprise. As I mentioned above, you can use whichever apples you enjoy most or have on hand. I used pink lady apples.
- Oats – The oats are the main ingredient that you will need for the oat crumble topping. If you want to make this recipe gluten free, make sure to use your favorite gluten free oats.
- Cinnamon – The cinnamon adds a ton of spice and flavor to the oat crumble topping. It is the perfect spice to pair with apples, and this baked apple recipe is no exception.
- Pure Maple Syrup – The pure maple syrup serves as the main source of additional sweetness for this recipe. You will be adding it into the oat crumble for sweetness and flavor.
- Nut Milk – The nut milk adds additional moisture to the oat crumble topping. I used unsweetened vanilla almond milk, but you can use whichever non-dairy milk you enjoy most or have on hand.

Baked Apples With Oats and Maple Syrup
Ingredients
- 2 medium fresh apples (I used pink lady apples)
- 1/4 cup rolled or quick cooking oats
- 1/4 tsp ground cinnamon
- 1 tbsp + 1 tsp nut milk (I used unsweetened vanilla almond milk)
- 1 tbsp + 1 tsp pure maple syrup
- creamy peanut butter (for drizzling on top)
- melted coconut oil (for brushing the apples with)
Instructions
- Preheat the oven to 350° F.
- Cut the apples in half lengthwise.
- Remove the core and seeds from each apple half.
- Place the apples face up on a baking sheet.
- Brush the outside of each apple half completely with melted coconut oil.
- In a small bowl, combine the oats, cinnamon, pure maple syrup, and nut milk.
- Spoon the oat mixture into the apple crevices, making sure to distribute it evenly between all of the apple halves.
- Bake the apples for about 30 minutes, or until your desired softness is achieved (you can poke the apples with a fork to see how soft they are inside).
- Let the apples cool for a bit, then drizzle on the creamy peanut butter.
- Dig in and enjoy!
