Vegan Chocolate Peppermint Donuts
Good morning friends! Today, I am back with another baked donut recipe. Last week’s donut recipe was so tasty that I had to make another flavor. This time, I have made the perfect winter donut flavor combination – chocolate peppermint. I don’t know about you guys, but I love all things peppermint. The moment December hits, I am more than ready to make all the peppermint themed treats.
I also love peppermint coffee. I just bought the Starbucks peppermint mocha coffee and I have been enjoying brewing a fresh, hot cup of it every morning. It is a special holiday edition flavor that comes around every winter and I look forward to buying it every year.
Anyways, enough about coffee. This post is about donuts. These chocolate peppermint donuts are easy to make, super fluffy, packed with peppermint flavor, and topped with candy cane pieces. They truly are delicious, and if you like cake donuts, I think you will absolutely love these.
These donuts are very reminiscent of cake donuts because they are baked rather than fried. The base tastes like a chocolate cake, and the top of each donut is frosted with melted chocolate chips. The donuts are then topped off with candy cane pieces for crunch and flavor. The candy canes also add a beautiful festive touch.
I wanted to get this recipe posted now since the holiday season has just begun and the donuts make for the perfect holiday party recipe. These donuts are best shared with friends and enjoyed with a hot cup of coffee or cold glass of milk (whichever suits your personal taste). They also store well in the refrigerator for a few days if you have leftovers. I recommend keeping them in some sort of airtight container for optimal freshness.
I had so much fun creating this winter themed recipe that I am inspired to bring more to you guys throughout the winter. So, if you have any recipe requests, make sure to leave a comment below and I will try to make it happen. Now, without further ado, let’s take a look at all the ingredients you will need to make this recipe a success.
Vegan Chocolate Peppermint Donuts – Ingredients
- Whole Wheat Pastry Flour – The whole wheat pastry flour is the first key base ingredient for these tasty chocolate peppermint baked donuts. I used Bob’s Red Mill whole wheat pastry flour.
- Old Fashioned Rolled Oats – The oats will be blended up to form a fine oat flour. The oat flour will then be combined with the pastry flour to form the perfect dry base for our donut batter.
- Cocoa Powder – The cocoa powder helps the base transform into a chocolate donut batter. It is absolutely essential for this chocolate peppermint donut recipe.
- Miniature Semi-Sweet Chocolate Chips – The miniature chocolate chips add sweetness and additional chocolate flavor to this simple yet delicious recipe. I used Enjoy Life Miniature Semi-Sweet Chocolate Chips.
- Miniature Candy Canes – The miniature candy canes add the peppermint flavor to this recipe as well as a nice crunch. They will be added on top of the donuts as the final step. They also add beautiful color to the chocolate peppermint baked donuts.
- Baking Powder – The baking powder is the first key leavening agent for this recipe. It helps ensure that the donuts come out nice and fluffy. It is an essential ingredient that you definitely don’t want to omit.
- Baking Soda – The baking soda combines with the baking powder to ensure the chocolate peppermint donuts turn out super fluffy and cake-like.
- Nut Milk – The nut milk serves as the main source of liquid for this chocolate peppermint donut recipe. I used unsweetened vanilla almond milk, but you can use whichever non-dairy milk you prefer or have on hand on.
- Pure Maple Syrup – The pure maple syrup serves as the main source of sweetness for this recipe. It is an unrefined sugar, and my favorite source of sweetness to use for vegan baked goods.
- Unsweetened Applesauce – The unsweetened applesauce adds a ton of moisture and a bit of extra sweetness to this recipe. It is the perfect addition to ensure your chocolate peppermint donuts come out super moist on the inside, just like traditional cake donuts.
