Good morning friends! It is two days until Thanksgiving as I write this post, and I am guessing that some of you are scrambling to finalize your Thanksgiving Day spread (I know I am). I am really excited to be making a lot of the Thanksgiving Day side dishes for my family this year. I will be making cornbread muffins, roasted Brussels sprouts, baked sweet potatoes, and even a vegan pumpkin pie.

While I know that most people are not vegan, some of you might be looking for some vegan side dishes to serve this Thanksgiving. Whether you are cooking up a dish for one of your vegan friends or family members, you are plant based yourself, or you simply want a dairy free dish to add to your Thanksgiving Day spread, I hope you find this post helpful. Once you have your vegan stuffing mix, you will add vegetable broth, fresh carrots, fresh celery, yellow onion, and minced garlic to the mix. You’ll bake it up for optimal texture and flavor.
