Good morning everyone! Today I am going to share a super tasty side dish recipe with all of you. This recipe is a super flavorful vegetable side dish that includes fresh green beans, fresh garlic, and nutritional yeast seasoning.

It combines two cooking methods, boiling and oven roasting, to create soft green beans with a ton of flavor and nutrients. Now, if that sounds intimidating, don’t worry. The recipe is actually quite simple, and everything comes together pretty quickly.

Green beans always remind me of the holidays. Or more specifically, they remind me of Thanksgiving. One of the Thanksgiving staples that my family has made repeatedly for years is oven roasted green beans with fresh onions. While the recipe I am sharing today is a little bit different, it is still very reminiscent of that dish.


When I was snapping the green beans last week to make this dish, I was instantly reminded of all the Thanksgivings I spent cooking in the kitchen with my mom, dad, and sisters. I love that cooking holds so many memories, and that it has truly become a source of joy for me.


I am especially grateful to have it during this time, since I have been unable to go out and do some of the things that I would usually enjoy doing over this past year. I am trying to make the most of the extra free time I currently have, and dive deeper into the passions that bring me immense happiness.


Over the last year, blogging and recipe creating have definitely been fun for me, and I am glad to have had the extra time to get in the kitchen and cook/bake delicious meals, snacks, and treats, just like the green beans I am sharing with you all today.


These green beans are super versatile. They are delicious, nutritious, and make a great side dish for any meal. Just a few days ago, I had them as a side to pair with my avocado toast and peanut butter banana toast, and they added a nice source of greens.


If you like green beans, this is definitely a recipe you will want to try out. So, let’s take a look at all the ingredients you will need to make this recipe. Like I said, it is very short and simple.


Oven Roasted Garlic Green Beans – Ingredients

  • Fresh Green Beans – First, you will need the green beans. This ingredient is pretty much a given. However, the way in which you will want to prepare them might not be. First, I recommend cutting off the stringy ends of the green beans.

    Then, you can snap the green beans in half. This step is optional, but because the green beans are pretty long, I find that they are easier to eat when I snap them in half before I cook them so that they are more bite sized.
  • Fresh Garlic – Ingredient two is fresh garlic. The fresh garlic adds a ton of flavor to the green beans. You will want to mince it finely so that you can distribute it evenly throughout the pan of green beans.

    Also, we will be adding the garlic towards the end of our roasting process, so that we make sure not to burn it. If you have ever tasted burnt garlic, then you know how bitter it is. That is definitely not what we want, so we will prevent that by adding the garlic later into the cooking process.
  • Nutritional Yeast Seasoning – The third item you will need for this recipe is nutritional yeast. The nutritional yeast seasoning adds a ton of flavor to this recipe. The seasoning is slightly nutty/cheesy, and it also adds a source of vitamin B12. I love using it as a seasoning for many of my recipes, and this one is no exception.
  • Salt and Pepper – The salt and pepper are the final two ingredients that add flavor to the green beans. You can adjust these to your own taste. I added a sprinkle of each to the green beans just before I put them in the oven.

Ingredients
  

  • 2 1/2 cups fresh green beans
  • 1 clove fresh minced garlic
  • 1 tsp nutritional yeast seasoning
  • salt to taste (I used Himalayan pink salt)
  • pepper to taste

Instructions
 

  • Chop the stringy ends off of the green beans, then snap the beans in half if desired to make shorter beans.
  • Add the beans to a large pot and cover with water.
  • Bring the beans to a boil over medium heat, then boil for 15 minutes, or until soft.
  • Preheat the oven to 400° F.
  • Drain and rinse the beans with cold water.
  • Pat dry the beans with a towel.
  • Spread the green beans out in a single layer on a lined/greased baking sheet.
  • Sprinkle on the nutritional yeast seasoning followed by the salt and pepper to taste.
  • Bake the green beans for 20 minutes.
  • Pull the green beans out of the oven, add the minced garlic on top of the beans, then pop the green beans back in the oven for 5 – 6 more minutes to cook.
  • Enjoy your green beans fresh and warm!
