Good morning everyone! I woke up bright and early this morning at 5:15 AM. I made a quick coffee and then got right to work on this blog post for all of you. I am one of those people who absolutely loves going to bed and waking up early before the sun has even risen. I find that the early morning hours are so peaceful. Plus, I am way more productive when I tackle my work with a fresh and clear mind after a good night’s sleep.
Anyway, let’s get back on track with today’s recipe – cheesy vegan cauliflower pizza casserole. This recipe is super simple, flavorful, and delicious. I came up with the idea for this recipe a few weeks ago. I had a whole head of cauliflower that I needed to cook up, and I was in the mood to try something new. I also recently got some adorable mini casserole dishes that I was eager to bake with. Thus, I decided to cut up my cauliflower and coat each piece in some sauce and spices. I added some vegan cheese on top to create what I like to call cauliflower pizza casserole.
The end result was even more incredible than I anticipated. After making this recipe twice in the span of two weeks, I just knew that I had to share this recipe with all of you. So, let’s take a look at some quick things to note for this recipe. Then, we will go through all of the ingredients you will need to make this easy vegan cheesy cauliflower pizza casserole recipe a smashing success!
What Dish Can Be Made From Cauliflower?
There are many different dishes that you can make from cauliflower. A few of my favorites include cauliflower mash, cauliflower fried rice, and of course, this cheesy cauliflower pizza casserole. This dish is just one delicious example of how you can use cauliflower. Now that we’ve covered that, let’s go through the list of ingredients you will need to make this cheesy cauliflower pizza casserole.
Cheesy Cauliflower Pizza Casserole – Ingredients
- Cauliflower – The first ingredient you will need for this recipe is, of course, the cauliflower. This ingredient should come as no surprise. One small to medium head of cauliflower will do the trick for this cheesy cauliflower pizza casserole. My head of cauliflower equated to about four cups (chopped).
- Black Pepper – There are three simple spices that you will need for this recipe. The first one is the black pepper, which is used to give this cauliflower casserole a little bit of heat. If you want to make this cauliflower extra spicy, you can increase the amount used. However, I don’t like my food too spicy, so I didn’t overdo it with the black pepper.
- Chili Powder – The chili powder adds a bit more spice to this cauliflower casserole. Again, a little bit goes a long way with this ingredient.
- Cumin – The cumin is the final spice used in this cheesy cauliflower pizza casserole to add even more depth of flavor to the dish.
- Marinara Sauce – The next ingredient you will need for this dish is the marinara sauce. This ingredient is absolutely crucial for this cauliflower pizza casserole. It provides this recipe with a lot of tomato flavor. You will want to use your favorite sauce. I went with the Mezzetta marinara sauce, as it is one of my favorite marinara sauces of all time. It is super rich and flavorful. You can use whichever sauce you prefer. Or, you can even make your own homemade marinara sauce from scratch if you would like.
- Vegan Cheddar Cheese Shreds – The vegan cheddar cheese shreds add the cheesy element and melty texture to this vegan cauliflower pizza casserole. This is the final ingredient that finishes off this recipe. You can use whichever brand of vegan cheese you like best. I used the Daiya vegan cheese shreds for this recipe, as I find that they melt pretty well. Plus, I like the flavor and texture of the Daiya vegan cheese.

Vegan Cheesy Cauliflower Pizza Casserole
Ingredients
- 4 cups chopped cauliflower (about one small/medium head)
- 2 tbsp vegan cheddar cheese shreds (I used Daiya brand)
- 1/4 tsp black pepper
- 1/4 tsp chili powder
- 1/4 tsp cumin
- 1 cup marinara sauce (I used Mezzetta brand)
Instructions
- Add the cauliflower to a pot and cover with water.
- Bring the cauliflower to a boil in a pot and cover it with the lid.
- Boil the cauliflower until soft, about 8 – 10 minutes.
- Drain and rinse the cauliflower thoroughly.
- Preheat the oven to 400° F.
- Place the cauliflower in a large mixing bowl and coat it evenly in the marinara sauce.
- Add the spices and mix to combine thoroughly.
- Divide the mixture evenly between four miniature casserole dishes (or pour it into a larger casserole dish).
- Sprinkle on the vegan cheese shreds.
- Cover the casserole dish(es) with the lid(s) and bake it for 12 minutes (you might need extra time for a larger dish).
- Uncover the casserole(s) and bake for about 4 – 5 more minutes to allow the vegan cheese to melt.
- Enjoy the casserole warm and fresh!

As you all can tell, this recipe is super easy to make. The end result is really tasty, so I can’t wait for you guys to try it.
