Vegan Cheesy Cauliflower Pizza Casserole

A delicious casserole made from cauliflower and coated in marinara sauce, spices, and vegan cheese shreds for an incredible pizza flavor.

- 4 cups chopped cauliflower (about one small/medium head)
- 2 tbsp vegan cheddar cheese shreds (I used Daiya brand)
- 1/4 tsp black pepper
- 1/4 tsp chili powder
- 1/4 tsp cumin
- 1 cup marinara sauce (I used Mezzetta brand)
Add the cauliflower to a pot and cover with water.
Bring the cauliflower to a boil in a pot and cover it with the lid.
Boil the cauliflower until soft, about 8 - 10 minutes.
Drain and rinse the cauliflower thoroughly.
Preheat the oven to 400° F.
Place the cauliflower in a large mixing bowl and coat it evenly in the marinara sauce.
Add the spices and mix to combine thoroughly.
Divide the mixture evenly between four miniature casserole dishes (or pour it into a larger casserole dish).
Sprinkle on the vegan cheese shreds.
Cover the casserole dish(es) with the lid(s) and bake it for 12 minutes (you might need extra time for a larger dish).
Uncover the casserole(s) and bake for about 4 - 5 more minutes to allow the vegan cheese to melt.
