Good morning everyone! Today, I am so excited to share a quick snack with all of you that requires only a few ingredients. It is super easy to make and it tastes delicious. It is also perfect to pack up and take with you to school or work. Plus, it’s an awesome recipe for beginners in the kitchen.

I used to make this snack all the time when I was in college. It was the perfect quick, easy, and budget friendly snack to have after my cross-country practices. Recently, I have been enjoying this banana sushi roll as a mid-afternoon snack to give myself a little boost of energy midway through the day.

Also, as the weather gets warmer, I am going to start taking afternoon walks outside more often to break up the workday and recharge my brain. This snack will be the perfect one to refuel with when I get back home.

We will also go through the list of ingredients you will need to make this recipe. There are three main ingredients, as well as a few optional add-ins.


How To Make Banana Sushi

To make vegan peanut butter banana sushi, there are just a few simple steps you have to follow. You first want to spread a layer of peanut butter on one side of your favorite flour tortilla. Next, you will want to roll a ripe banana into the tortilla. Then, cut the roll-up into “sushi” pieces of equal size. You can also add some peanut butter to the outside of your tortilla and then roll it in some granola, mini chocolate chips, or whatever else you’d like for a bit of crunch and extra flavor. This ingredient is essential, and you want to make sure your tortilla is soft and easy to roll-up for the best “sushi” pieces.
  • Creamy Peanut Butter – The second ingredient you will need for your banana sushi is the peanut butter. Alternatively, you can substitute another nut or seed butter if you prefer. You will want to spread a nice even layer down so that each sushi pieces has some delicious peanut butter flavor.
  • Banana – The third key ingredient you will need for your sushi roll is the banana. You will want to peel it and roll it right up inside your tortilla. The banana adds sweetness and a ton of flavor to this recipe. The banana flavor combines perfectly with the peanut butter and the tortilla. Once you have the banana rolled up carefully inside the tortilla, you will want to use a sharp knife to cut the roll-up into “sushi” pieces.

Ingredients

Instructions
 

  • Spread the peanut butter evenly across one side of the tortilla.
  • Place the banana at the edge of the tortilla on top of the peanut butter spread.
  • Tightly roll the banana up inside the tortilla.
  • Use a sharp knife to cut the roll into banana "sushi" pieces.
