Homemade Mini Chocolate Chip Bagels

Good morning everyone! As you all already know, I absolutely love breakfast foods. During the work week, I tend to stick to oatmeal most of the time because it is quick, easy, healthy, and keeps me fueled through my morning work and run.


However, on the weekends, I enjoy doing a ton of recipe testing since I have quite a bit more free time. That is when I create a lot of the recipes that you eventually see on this blog and my YouTube channel (subscribe here!).


I have always been a creative person, and I love being able to channel that creativity into making healthy and delicious foods that I can share with you all, and enjoy with my family every single week as well. It’s a win-win situation, because I get to meal prep and create tasty recipes for my blog and YouTube channel at the same time.


So, a few days after Christmas, I wanted to try out the new silicone donut/bagel pans that I received, and I thought of making some delicious, healthy vegan bagels inspired by the fresh chocolate chip bagels I used to eat at Panera. Unfortunately, the chocolate chip ones at Panera aren’t vegan, so I haven’t been able to have them for many years.


Luckily, I made this even better recipe for the perfect mini vegan chocolate chip bagels that are super healthy and tasty. So, let’s take a look at all the ingredients you will need to make this recipe a success. I think you will be happy with the super simple steps and short ingredients list.


Homemade Mini Chocolate Chip Bagels – Ingredients

  • Whole Wheat Pastry Flour – This ingredient acts as the healthy base for our bagels. It is a healthy flour that I love to use for baking on many different occasions.
  • Oat Flour – This ingredient ensures that your bagels aren’t too dense. It adds some fluffiness, and absorbs some of the moisture to make a super tasty bagel. When combined with the whole wheat pastry flour, it creates the perfect consistency.
  • Unsweetened Applesauce – This ingredient adds moisture to the bagels so they aren’t too thick or dry. A little bit goes a long way with this ingredient. It also adds some natural sweetness.
  • Flax Egg – The flax egg helps everything stick together nicely. It’s made very simply from ground flaxseed and water, and you can read the quick and easy tutorial on how to make one here if you haven’t made one before.
  • Water – The water is what turns the mixture into a bagel dough.
  • Baking Powder – The baking powder will ensure that the bagels rise. After all, we don’t want bagel thins.
  • Mini Vegan Semi-Sweet Chocolate Chips – The miniature vegan chocolate chips complete these bagels. Without this ingredient, you wouldn’t have chocolate chip bagels at all. Since we are making mini bagels, I thought it was fitting to use miniature chocolate chips. I used the Enjoy Life miniature semi-sweet chocolate chips, and they worked perfectly in this recipe, so I highly recommend them.

Ingredients
  

  • 1/2 cup whole wheat pastry flour (I used Bob's Red Mill)
  • 1/2 cup oat flour (I used Bob's Red Mill)
  • 1 flax egg (see note below recipe for linked tutorial if you don't know how to make a flax egg)
  • 1 tbsp mini semi-sweet chocolate chips (I used Enjoy Life Minis)
  • 1 tsp baking powder
  • 1/4 cup water
  • 2 tbsp unsweetened applesauce

Instructions
 

  • Preheat your oven to 350° F.
  • In a large mixing bowl, combine all dry ingredients, except the chocolate chips.
  • In a separate mixing bowl, whisk together the flax egg, water, and applesauce, and mix thoroughly.
  • Pour the wet ingredients into the dry, and mix to combine.
  • Gently fold in the miniature chocolate chips.
  • Distribute batter evenly between the six cavities of your donut/bagel pan.

  • Bake for about 17 – 18 minutes, or until a toothpick inserted comes out clean.

Helpful Notes:

As you can tell, these mini chocolate chip bagels are a super easy mode recipe. The recipe only requires seven simple ingredients, there is no yeast involved, and the entire recipe comes together in minutes. I truly love easy recipes like this one.


I am also glad to finally have a bagel recipe up on the blog. I have done oatmeal, donuts, muffins, breads, etc., but I don’t believe I have ever posted a bagel recipe on the blog, so I am glad I was able to do so today.


Trust me, this recipe is too good not to try. And if you love peanut butter like I do, you need to try slicing your chocolate chip bagel in half and topping it with peanut butter. It is so incredibly delicious!
