Best Homemade Mini Chocolate Chip Bagels

The best fluffy vegan mini chocolate chip bagels with the perfect amount of sweetness.

Ingredients
  

  • 1/2 cup whole wheat pastry flour (I used Bob's Red Mill)
  • 1/2 cup oat flour (I used Bob's Red Mill)
  • 1 flax egg (see note below recipe for linked tutorial if you don't know how to make a flax egg)
  • 1 tbsp mini semi-sweet chocolate chips (I used Enjoy Life Minis)
  • 1 tsp baking powder
  • 1/4 cup water
  • 2 tbsp unsweetened applesauce

Instructions
 

  • Preheat your oven to 350° F.
  • In a large mixing bowl, combine all dry ingredients, except the chocolate chips.
  • In a separate mixing bowl, whisk together the flax egg, water, and applesauce, and mix thoroughly.
  • Pour the wet ingredients into the dry, and mix to combine.
  • Gently fold in the miniature chocolate chips.
  • Distribute batter evenly between the six cavities of your donut/bagel pan.

  • Bake for about 17 - 18 minutes, or until a toothpick inserted comes out clean.
