Good morning everyone! I hope you all had a safe and wonderful Christmas, or if you don’t celebrate Christmas, I hope you have had an amazing holiday season thus far! I spent the day with my parents and little sister. It wasn’t quite the same without my older sister here, but at least we were able to call and chat with her for a little while.
Our Christmas morning breakfast consisted of a tofu scramble that my little sister made, sourdough bread topped with mashed avocado, and a vegan gingerbread loaf that I pre-made on Christmas Eve! It was so tasty that I absolutely had to share the recipe as soon as possible with all of you.
This gingerbread loaf is super moist, packed with spices, and has the perfect subtle hint of sweetness. Plus, if you want it to be sweeter, you can add some extra pure maple syrup and adjust the amount of nut milk you add.
So, let’s take a look at all the ingredients you will need to make this incredible vegan gingerbread loaf that is moist, fluffy, and subtly sweet.
Healthy Vegan Gingerbread Loaf – Ingredients
- Whole Wheat Pastry Flour – This ingredient serves as the main base for the gingerbread loaf. It combines perfectly with the oat flour to make a moist yet dense gingerbread loaf.
- Oat Flour – As per usual, I blended up some old fashioned rolled oats in my NutriBullet blender to form an oat flour. I always make my own, because it’s super easy, and I love oats, so I always have them on hand.
- Ginger – The ginger is one of the key spices in any gingerbread flavored baked treat. This gingerbread loaf is no exception.
- Cinnamon and Nutmeg – Again, these spices scream gingerbread, and the holidays in general. I have a slight obsession with cinnamon, and I put it on basically anything and everything sweet that I eat.
- Baking Soda – This ingredient really helps the bread rise, so don’t forget it! You don’t want a flat gingerbread loaf.
- Salt – The salt really brings out all the other flavors, and it combines well with the other sweeter ingredients and spices.
- MolassesThe molasses is a key ingredient in any gingerbread recipe. Whether you are making gingerbread cookies or a gingerbread loaf, you will definitely need molasses.
- Apple Cider Vinegar – This ingredient works with the baking soda to ensure your gingerbread loaf rises.
- Unsweetened Applesauce – The unsweetened applesauce in this recipe adds a ton of moisture and some natural sweetness.
- Nut Milk – I used unsweetened vanilla almond milk in this recipe, and it was absolutely perfect. If you want, you can also add some maple syrup to make your bread sweeter. If you do so, you might need less nut milk, since the maple syrup will add moisture.
- Additional Loaf Toppings – This step is obviously optional, but you could top your gingerbread loaf with your favorite icing, or a sprinkle of powdered sugar. I decided to top my loaf with powdered sugar, because I thought it looked really pretty, and it also added a dash of extra sweetness.

Easy Vegan Gingerbread Loaf
Ingredients
- 1 cup whole wheat pastry flour (I used Bob's Red Mill)
- 1/2 cup oat flour
- 1 1/2 tsp ginger
- 1 1/2 tsp cinnamon
- 3/4 tsp baking soda
- 1/4 tsp nutmeg
- 1/16 tsp salt (I used Himalayan pink salt)
- 7 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1/3 cup unsweetened applesauce
- 1/4 cup molasses
- 2 tsp apple cider vinegar
- powdered sugar (optional, for topping)
Instructions
- Preheat your oven to 350° F.
- In a large mixing bowl, combine the pastry flour, oat flour, ginger, cinnamon, baking soda, nutmeg, and salt.
- In a separate mixing bowl, whisk together the molasses, apple cider vinegar, applesauce, and nut milk.
- Pour wet ingredients into dry, and mix to combine thoroughly.
- Pour the gingerbread loaf batter into a lined/greased rectangular pan. I used a miniature loaf pan.
- Bake the gingerbread loaf for 30 minutes, or until a toothpick inserted comes out clean.
- Top with optional icing or powdered sugar.
- Let cool completely before cutting into slices.
- Enjoy warm or cold with some vegan vanilla ice cream, coco whip, or whatever else you'd like!
Notes
This recipe was much easier to put together than I originally thought. I really wanted to make sure that the loaf rose plenty and turned out super moist on the inside. Luckily, this combination turned out perfectly.
I think the applesauce helped immensely with the moistness, and I love that this loaf wasn’t overly sweet. My family loved this recipe so much that we ate the entire thing within two days. I made the gingerbread loaf on Christmas Eve, and by lunchtime on Christmas Day, we had already finished it off.
I also think the powdered sugar topping was a really nice addition. If you make this recipe and have some powdered sugar on hand, I definitely recommend sprinkling a bit on top of your gingerbread loaf. It honestly looks so beautiful on top of the loaf.
