Preheat your oven to 350° F.
In a large mixing bowl, combine the pastry flour, oat flour, ginger, cinnamon, baking soda, nutmeg, and salt.
In a separate mixing bowl, whisk together the molasses, apple cider vinegar, applesauce, and nut milk.
Pour wet ingredients into dry, and mix to combine thoroughly.
Pour the gingerbread loaf batter into a lined/greased rectangular pan. I used a miniature loaf pan.
Bake the gingerbread loaf for 30 minutes, or until a toothpick inserted comes out clean.
Top with optional icing or powdered sugar.
Let cool completely before cutting into slices.
Enjoy warm or cold with some vegan vanilla ice cream, coco whip, or whatever else you'd like!
