Good morning everyone! I don’t know about you guys, but I’ve been on a serious work grind lately. I feel like I have a never ending to do list, and it always seems like there isn’t enough time in the day to get everything done that I want to.

I’ve been getting up between 5 and 6 AM lately, which has definitely helped boost my overall productivity each day. I must say that it feels incredible to get a few solid hours of work completed before the sun has even risen. As a result of my busy schedule lately, I have been especially reliant on easy snacks and treats to keep me fueled and focused all day long.

The vanilla protein muffin recipe that I’m about to share has been one of my go-to recipes lately. I promise that it does not disappoint. These muffins are the perfect tasty treat to end the night with. They are nice and sweet, super moist, light, fluffy, and they have that classic vanilla cake flavor.

Now, let’s go through some quick things to note for this recipe. Then, we will take a look at the list of ingredients you need to make these vanilla birthday cake protein muffins.


What Are Vegan Muffins Made Of?

Vegan protein muffins can include a wide variety of ingredients. These muffins specifically use mostly simple, easy to find ingredients. Applesauce and nut butter are used for moisture, maple syrup is used for sweetness, and vegan vanilla protein powder is used to add a protein boost as well as a rich vanilla flavor. When combined with all the other ingredients, these vegan muffins turn out super fluffy, moist, sweet, and delicious.

Without this ingredient, the muffins wouldn’t have that strong vanilla cake flavor. You can use whichever vegan vanilla protein powder you enjoy most. I used the Orgain Simple protein powder in the creamy vanilla flavor.
  • Rainbow Sprinkles – The rainbow sprinkles add a ton of flavor, color, and sweetness to this vegan protein muffin recipe. They are gently folded into the muffin batter. You can also reserve some sprinkles to top your protein muffins off with before popping them in the oven to bake.
  • Baking Powder – The baking powder serves as the first crucial leavening agent used in this recipe to ensure the muffins turn out nice and fluffy.
  • Baking Soda – The baking soda is the other important leavening agent used in this recipe to help the protein muffins rise.
  • Nut Milk – The nut milk adds a ton of creaminess to the muffin batter. I used unsweetened vanilla almond milk, but you can use whichever kind you have on hand or enjoy most.
  • Pure Maple Syrup – The pure maple syrup is one of the main sources of sweetness in this recipe. It also helps all the ingredients come together to form the perfect muffin batter consistency.

Ingredients
  

  • 1/2 cup quick oats (blended into a fine oat flour)
  • 1/4 cup whole wheat flour
  • 3 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
  • 2 tbsp rainbow sprinkles
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup + 1 1/2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 3 tbsp pure maple syrup
  • 2 1/2 tbsp unsweetened applesauce
  • 1 tbsp creamy peanut butter

Instructions
 

  • Preheat the oven to 350° F.
  • Add the oat flour, whole wheat flour, vanilla protein powder, baking powder, and baking soda to a large mixing bowl.
  • Mix all dry ingredients thoroughly to combine.
  • Make a well in the center of the bowl, then add the maple syrup, nut milk, applesauce, and peanut butter.
  • Mix all wet ingredients to combine, then slowly mix the wet ingredients into the dry to form a smooth muffin batter.
  • Gently fold in the rainbow sprinkles, reserving some to top the muffins with if desired.
  • Evenly distribute the batter between six cavities of a lined or greased muffin pan, filling each cavity about 2/3 full.
  • Top each muffin with some rainbow sprinkles if desired.
  • Bake the muffins for about 22 – 25 minutes, or until a toothpick inserted comes out clean.
  • Let the muffins cool completely before removing them from the pan.
