Good morning everyone! Today’s recipe is a simple and delicious one. You guys know how much I absolutely love simple and quick recipes that don’t sacrifice flavor. Today, I am going to share a quick and easy vegan blueberry drop biscuit recipe.

These biscuits are fluffy, flaky, subtly sweet, and ready in just about 20 minutes. They are the perfect breakfast or brunch option. I even love slathering them with some peanut butter for a super satisfying snack.

The key to this recipe are fresh blueberries. You have to make sure your blueberries are sweet and juicy. They really do make all the difference. The blueberries are the key ingredient, and they are in season right now. This means they not only taste amazing, but they are also much less expensive.

I love to get my fresh produce from the farmer’s market in the summer if I can, which I highly recommend. Obviously it’s not as feasible right now, but buying local helps farmers in your community and ensures your produce is much fresher.

  • Bisquick – First, you’ll start with some Bisquick. Bisquick is a quick and easy mix that can be used to make biscuits, pancakes, and much more. While I typically use whole wheat or oat flour for my recipes to boost the health and nutrient content, you really need a less dense flour for this recipe to make the biscuits light and fluffy.

    For this recipe, Bisquick works perfectly. It achieves the right texture and consistency you want for these biscuits. I haven’t tried any other flours, so I don’t know of any substitutes for this step.
  • Fresh Blueberries – Next, you will be using some fresh blueberries. I have already touched on this ingredient a little bit. It really is a very important part of this recipe, so make sure you have a good batch of berries to fold into the batter. It shouldn’t be too hard to find sweet blueberries right now because they are in season for the summertime.
  • Cinnamon – After that, you will need a bit of cinnamon. I love cinnamon so much. I use it daily on top of my oatmeal, in many of my baked goods, and even on top of peanut butter toast. It adds a nice kick to anything you put it on, and it is also supposed to help keep your metabolism going throughout the day. So, a small bit mixed into the biscuit batter is perfect in this recipe.
  • Almond Milk – I almost always use unsweetened vanilla almond milk when I’m making baked goods. The first reason is so I don’t add additional sugar to the recipe. Many nut milks have options that are loaded with sugar. So, the unsweetened version is a much better option if you’re trying to watch your daily intake of added sugar.

    The second reason is because I like the hint of vanilla in recipes. It really boosts the flavor of all the other ingredients and takes the recipe up a notch. It may be subtle, but I do think it makes a difference.
  • Pure Maple Syrup – A little bit of pure maple syrup adds just a bit of sweetness to these biscuits. It honestly isn’t even necessary, especially if you are topping your biscuits with peanut butter or vegan butter. But, I like that subtle sweetness that the maple syrup adds. So, I highly recommend using it in this recipe.

Ingredients
  

  • 1 cup Bisquick
  • 1/4 cup fresh blueberries
  • 1/2 tsp cinnamon
  • 3 tbsp unsweetened vanilla almond milk
  • 1 tbsp pure maple syrup

Instructions
 

  • Preheat oven to 450° F.
  • In a mixing bowl, combine Bisquick and cinnamon.
  • Mix in maple syrup and almond milk.
  • Gently fold in fresh blueberries, being careful not to squish them.
  • Line a baking sheet with parchment paper.
  • Form dough into equal sized round balls with hands.

  • Drop dough balls onto baking sheet and flatten slightly.
  • Bake for about 10 minutes, or untill golden brown.
