Simple Cinnamon French Toast

Vegan cinnamon French toast recipe that is delicious, healthy, fluffy, and incredibly simple. We’re talking 6 ingredients simple. It is made without milk, eggs, sugar, heavy cream, or any other dairy. It’s super healthy for you and a great treat or breakfast food your entire family will enjoy.

Simple Cinnamon French Toast

Good morning everyone! You guys know how much I love my pancakes and oatmeal, but sometimes I like to switch it up and make something completely different. Today, I decided to go with French toast. My love for French toast started early.

When I was little, one of the special breakfasts my mom made for my sisters and I was French toast. We only had it on rare occasions, but it was one of the breakfast foods my sisters and I loved the most. Of course, back then she made it with eggs and we piled on the maple syrup and powdered sugar.

We were always bouncing off the walls after that huge sugar rush. So, maybe that’s why we didn’t get to eat it very often. Nonetheless, I still love making fresh homemade French toast today.

But, this French toast is different. I created this French toast recipe using a few simple ingredients, no added sugar, no dairy, and all the flavor. This just goes to show that you can make so many incredible vegan dishes that taste amazing and are good for your health. Let’s dive into these ingredients.


Simple Cinnamon French Toast – Ingredients

  • Bread – I used Nature’s Own 100% whole wheat bread. It’s what I had on hand. The ingredients are fairly healthy for packaged bread, and it’s a relatively inexpensive option you can find at the grocery store.

    My absolute favorite packaged bread is Dave’s Killer Bread, but that one costs a pretty penny, so I don’t buy it too often. But, when I do, it’s an absolute treat. If you like seedy, grainy breads, I would definitely recommend it.
  • Berries – I had some frozen mixed berries in the freezer, which turned out to be the perfect option. I like that when you microwave frozen berries, they have some liquid that’s a mix of the frozen ice and juice from the berries. It soaks into the French toast and adds some sweetness and flavor.
  • Ground Flaxseed – This will be part of what makes up the coating that we will dip our bread in. When mixed with the milk and cinnamon, it will form a thicker consistency, and will then form the layer that perfectly coats your two slices of bread.
  • Peanut Butter – Of course, no breakfast of mine is complete without some peanut butter on top. I suggest using a creamy one so you can get that nice drizzle going. If you’re allergic to peanut butter, you can always go for almond butter or some other allergy friendly substitute.

    Or, you can omit it completely. After all, it’s just a topping. But, I think it takes this French toast to a whole new level, especially if you don’t plan on topping it with pure maple syrup.
  • Cinnamon and Nut Milk – The cinnamon and almond milk combine with the flaxseed to make the coating. I used unsweetened vanilla almond milk, but any nut milk you have will work perfectly.

    There’s no need to use sweetened milk, but if you do use that, it will probably just make the recipe sweeter overall, as well as the bread itself, since it will be soaked in the almond milk mixture. Really, it’s up to you and your personal preference of how sweet you want your French toast.

Ingredients
  

  • 2 pieces bread
  • 1/4 cup berries of choice (I used a mix of frozen blueberries, raspberries, and blackberries)
  • 1 tbsp ground flaxseed meal
  • 1 tbsp creamy peanut butter
  • 1 tsp cinnamon
  • 1/4 cup unsweetened vanilla almond milk

Instructions
 

  • Combine milk, ground flaxseed meal, and cinnamon thoroughly, then set aside for about 5 minutes.
  • Grease a pan and turn your stovetop onto medium-low heat.
  • Pour your flaxseed mixture evenly into a shallow dish that can fit your bread.
  • Dip each piece of bread into the mixture for a few seconds on both sides, coating it thinly. 
  • Cook each piece of bread for a couple minutes on each side, until golden brown. 
  • Top your French toast with peanut butter, berries, and whatever else you'd like, such as maple syrup or powdered sugar. 
  • Dig in!

Even as I was making this recipe, my mind was already thinking up a ton of different flavors that could be made from this – like peanut butter chocolate chip French toast or banana caramel. Who knows, maybe one of those will make it to the blog someday.
