Good morning everyone! I don’t know about you guys, but pancakes have become a weekend breakfast staple for me. My current Saturday routine goes a little something like this. I wake up, make myself a coffee, eat a quick snack, then head out the door for my morning run. After I finish, I enjoy a delicious stack of pancakes.

And since we’re on the topic of running, I might as well give you guys a quick training update. My main goal this summer is to slowly build up my mileage and workout intensity. With no races on the schedule (and no plans to enter into any races), I have a lot of freedom with my training. I really want to focus on having fun since I no longer have to worry about the stress of competing and performing. For those who don’t know or are new to my blog, I ran cross-country and track in college 🙂

Now, enough about running. Let’s switch gears and talk about pancakes. I recently created a simple and delicious flourless, gluten free pancake recipe that combines two of my favorite foods – peanut butter and banana. What I ended up with was a delicious, sweet, and flavorful stack of peanut butter banana protein pancakes.

This pancake recipe is awesome because it is completely vegan, packs in some extra protein from the powdered peanut butter, and it requires no flour (only quick oats which will be blended into a “flour”). This recipe can be made completely gluten free by using your favorite gluten free oats, and most of the ingredients are very simple and budget friendly. Now, let’s go through some quick things to note for this recipe. Then, we will take a look at all the ingredients you will need to make these vegan peanut butter banana oat pancakes.


What Are Vegan Pancakes Made Of?

This is actually a really broad question with an equally broad answer. Vegan pancakes can be made from a wide variety of ingredients, so long as those ingredients do not contain animal products. With these vegan peanut butter banana pancakes specifically, oat flour and powdered peanut butter are used as the two main dry ingredients. I love using oat flour in pancake recipes because it is super budget friendly.

This vegan pancake recipe also uses blended banana to ensure that the pancakes have plenty of moisture. Baking powder is used to help the pancakes achieve a lighter and fluffier texture. These two ingredients are essential since we are not using eggs in our pancakes. I personally find that the banana is a great substitute for eggs in vegan pancake recipes. Applesauce is another substitute that I use often in pancake recipes.

  • Quick Oats – The quick oats are the first essential ingredient you will need for this pancake recipe. As per usual, I blended my oats up to form a fine oat flour. If you want to make this recipe gluten free, use your favorite gluten free oats.
  • Powdered Peanut Butter – The powdered peanut butter adds a little bit of sweetness and peanut butter flavor to the pancakes. I used PBFit, but you can use any brand you like.
  • Ripe Banana – The ripe banana gives the pancakes a ton of flavor and moisture, as well as some extra sweetness.
  • Baking Powder – The baking powder acts as the key leavening agent for this recipe. It is an important ingredient that you definitely don’t want to omit.
  • Nut Milk – The nut milk adds creaminess to the pancake batter. It serves as the main source of liquid for this recipe. I used unsweetened vanilla almond milk, but you can use whichever kind you prefer or have on hand.
  • Creamy Peanut Butter – The creamy peanut butter adds a ton of richness and flavor to this pancake recipe. It is one of the key toppings.
  • Pure Maple Syrup – The pure maple syrup serves as the main source of sweetness for this recipe. This ingredient will be drizzled on top of your pancakes once they are done cooking.

Ingredients
  

  • 1/2 cup quick oats (blended into a fine oat flour)
  • 3 tbsp powdered peanut butter (I used PBFit)
  • 1 small ripe banana
  • 1/4 tsp baking powder
  • 1/4 cup + 3 tbsp nut milk (I used unsweetened original almond milk)
  • 1 tbsp creamy peanut butter (for topping)
  • pure maple syrup to taste (for topping)

Instructions
 

  • In a mixing bowl, combine the oat flour, powdered peanut butter, and baking powder.
  • Blend 1/3 of the ripe banana until smooth.
  • Add the nut milk and blended banana to the dry ingredients, and mix well to combine.
  • Thinly slice the remaining 2/3 of the banana.
  • Gently fold in the sliced banana, reserving a few slices for topping your pancakes with if desired.
  • Pour dollops of batter onto a greased pan or pancake griddle.
  • Cook the pancakes for a few minutes on each side until golden brown.
  • Plate the pancakes.
  • Top the pancakes off with the creamy peanut butter, banana slices, and pure maple syrup to taste.
