I absolutely love banana bread and all things pumpkin, so I figured why not combine them? This pumpkin chocolate chip banana bread is super moist, sweet, and delicious. Plus, it tastes incredible topped with peanut butter 🙂
One of the reasons I love banana bread so much is because you get to use up your overripe bananas that are on the verge of going back. I am someone who hates waste, especially food waste. So, I try to use up every single thing I buy. Repurposing ingredients for various dishes is one easy way to achieve that goal.

Vegan Pumpkin Chocolate Chip Banana Bread
Ingredients
- 1 cup quick oats (blended into a fine oat flour)
- 1/2 cup bread flour
- 2 tbsp coconut sugar
- 2 tbsp semi-sweet chocolate chips (plus more for topping)
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 medium overripe banana (mashed)
- 1/2 cup nut milk
- 1/4 cup + 2 tbsp canned pumpkin
- 3 tbsp maple syrup
Instructions
- Preheat the oven to 350° F.
- Add the oat flour, bread flour, coconut sugar, cinnamon, pumpkin pie spice, baking powder, and baking soda to a large mixing bowl.
- Mix to combine thoroughly.
- Make a well in the center of the bowl, then add the mashed banana, nut milk, canned pumpkin, and pure maple syrup.
- Mix the wet ingredients together, then slowly mix the wet into the dry to form a smooth batter.
- Gently fold in the chocolate chips.
- Pour the batter into a lined or greased loaf pan.
- Sprinkle a handful of chocolate chips on top of the loaf.
- Bake the pumpkin bread for about 30 minutes, or until a toothpick inserted comes out clean.
- Let the pumpkin bread cool for a bit before removing it from the pan.
- Cut the pumpkin bread into eight slices.
