Vegan Pumpkin Chocolate Chip Banana Bread

Ingredients
  

  • 1 cup quick oats (blended into a fine oat flour)
  • 1/2 cup bread flour
  • 2 tbsp coconut sugar
  • 2 tbsp semi-sweet chocolate chips (plus more for topping)
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 medium overripe banana (mashed)
  • 1/2 cup nut milk
  • 1/4 cup + 2 tbsp canned pumpkin
  • 3 tbsp maple syrup

Instructions
 

  • Preheat the oven to 350° F.
  • Add the oat flour, bread flour, coconut sugar, cinnamon, pumpkin pie spice, baking powder, and baking soda to a large mixing bowl.
  • Mix to combine thoroughly.
  • Make a well in the center of the bowl, then add the mashed banana, nut milk, canned pumpkin, and pure maple syrup.
  • Mix the wet ingredients together, then slowly mix the wet into the dry to form a smooth batter.
  • Gently fold in the chocolate chips.
  • Pour the batter into a lined or greased loaf pan.
  • Sprinkle a handful of chocolate chips on top of the loaf.
  • Bake the pumpkin bread for about 30 minutes, or until a toothpick inserted comes out clean.
  • Let the pumpkin bread cool for a bit before removing it from the pan.
  • Cut the pumpkin bread into eight slices.
