I have been getting more and more requests recently to create gluten free recipes, so I am trying to incorporate them into my blog posts whenever I can. That’s exactly what I did with the vegan birthday cake cookies recipe I’m about to share with all of you today.
These vegan and gluten free birithday cake cookies are soft, chewy, moist, and packed with sweetness. They sneak in some protein from the vegan vanilla protein powder, and they are surprisingly easy to make. Best of all, they cook in the oven in just 10 minutes, You also don’t have to refrigerate the dough before you bake the cookies. So, you can make fresh, warm, and tasty cookies whenever the craving hits.

Do Protein Cookies Have Gluten?
This question doesn’t exactly have a clear answer, as protein cookies can be made in a wide variety of ways. While many store-bought cookies do contain gluten, there are some gluten free options on the market today. I have made protein cookies many times. With this specific recipe, I wanted to make the cookies gluten free friendly. So, I opted to use gluten free flour. But don’t worry, these vegan and gluten free cookies are not lacking in flavor, and the texture is great.
Can I Replace Flour With Protein Powder?
I do not recommend completely replacing flour with protein powder when making baked goods. In my experience, the texture and flavor are both negatively impacted. Instead, I like to use a flour base with a little bit of protein powder for additional flavor and a boost in protein. With this birthday cake cookie recipe, I started with a gluten free flour base. I added a little bit of protein powder to strike the perfect balance. The vanilla protein powder adds both flavor and sweetness to these birthday cake cookies. I always recommend using a protein powder that you truly like the taste of. I used the Orgain Simple vegan protein powder in the creamy vanilla flavor.

This ingredient is used in place of traditional flour so that the cookies are gluten free friendly.
- Coconut Sugar – The coconut sugar serves as the main source of sweetness in this cookie recipe.
- Rainbow Sprinkles – The rainbow sprinkles add a ton of color as well as some sweetness to this recipe. I used rainbow confetti sprinkles, but you can use whichever kind you have on hand or enjoy most.
- Vegan Vanilla Protein Powder – As mentioned, these birthday cake cookies contain a little bit of protein powder for a boost in protein and a richer vanilla birthday cake flavor. I used the Orgain Simple protein powder in the creamy vanilla flavor, but you can use whichever kind you prefer or have on hand.

Gluten Free Vegan Birthday Cake Protein Cookies
Ingredients
- 3/4 cup gluten free 1 to 1 baking flour (I used Bob's Red Mill brand which was sent to me)
- 1/2 cup coconut sugar
- 3 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
- 2 tbsp rainbow sprinkles (I used confetti sprinkles)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp melted coconut oil (measure after melting)
- 1/4 cup nut milk (I used unsweetened vanilla almond milk)
Instructions
- Preheat the oven to 350° F.
- Combine the flour, protein powder, coconut sugar, baking powder, and baking soda in a large mixing bowl.
- Add the melted coconut oil and nut milk.
- Mix again until a thick and sticky cookie dough forms.
- Gently fold in the rainbow sprinkles.
- Divide the dough into 12 equally sized pieces.
- Roll each piece of dough into a round ball.
- Place the cookie dough balls on a lined or greased baking sheet, leaving space between each one.
- Bake the cookies for about 6-8 minutes, press them flat with the back of a rubber spatula, then bake them for another 1-2 minutes, or until golden brown.
- Let the cookies cool completely (they will firm up during this time), then dig in and enjoy!
