Good morning friends! Wow, it has been a long time since I last blogged. Honestly, I have missed cooking and posting recipes so much 🙁 My college classes and running have taken up a lot of my time recently, so I apologize for not blogging very much.
It is definitely more difficult to create recipes while I am at school because I live in the dorms and don’t really have access to a traditional kitchen. Luckily, I will be home all winter, which means I can create and share a lot more recipes very soon.
Anyways, I am currently home for the weekend, so I decided to whip up something in the kitchen today. I was craving a sweet treat, so I tried to make a vegan strawberry shortcake baked oatmeal cake of sorts. It turned out perfect, so I just have to share the recipe with all of you 🙂
I love the moistness and texture of this strawberry shortcake baked oatmeal. It truly does taste like a single serve oatmeal cake. Now, before we get into the recipe, let’s take a look at the logistics as well as a full list of ingredients you will need to make this recipe a smashing success.
Can I Bake With Quick Oats?
A super common question regarding baked oatmeal is what type of oats are best to use. I tend to use quick oats for most of my oatmeal recipes because I prefer the creamier texture. My baked oats recipes are no exception. I simply blend the quick oats up to form an oat flour, then combine the oat flour with the rest of the ingredients.
For this recipe specficially, the oat flour is combined with protein powder to form the dry base. While I haven’t tried using rolled oats to make this strawberry shortcake baked oatmeal, you could probably sub them if you don’t have quick oats on hand.

- Quick Oats – The quick oats will serve as one of the key base ingredients for this strawberry shortcake baked oatmeal recipe. They will be blended up to form a fine oat flour. If you want this recipe to be completely gluten free, use your favorite gluten free oats.
- Vanilla Protein Powder – The vanilla protein powder is an essential ingredient which adds a classic and sweet vanilla flavor to the oatmeal base. I used the Orgain simple vegan protein powder in the creamy vanilla flavor. It is one of my favorites in terms of texture and taste, so I definitely recommend it.
- Fresh Strawberries – Fresh strawberries are absolutely necessary for strawberry shortcake, and this baked oatmeal version is no exception. You will be chopping your fresh berries up and mixing them into the batter, so hopefully they are nice and sweet.
- Baking Powder – The baking powder serves as the key leavening agent for this recipe, so make sure you don’t forget it. You want your baked oatmeal to turn out nice and fluffy.
- Nut Milk – The nut milk is the main source of liquid for this recipe. It adds creaminess to your strawberry shortcake baked oatmeal. I used unsweetened vanilla almond milk, but you can use whichever kind you prefer or have on hand.
- Pure Maple Syrup – The pure maple syrup adds extra sweetness to this baked oatmeal recipe. It is one of my favorite ingredients to use when baking.

Vegan Strawberry Shortcake Baked Oatmeal
Ingredients
- 1/4 cup + 1 tbsp oats (blended into oat flour)
- 3 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
- 2 small fresh strawberries (plus more for topping)
- 1/4 tsp baking powder
- 4 1/2 tbsp nut milk
- 1 tsp pure maple syrup
- coconut whipped cream (for topping)
Instructions
- Preheat the oven to 350° F.
- In a mixing bowl, combine the oat flour, vanilla protein powder, and baking powder.
- Add the nut milk and pure maple syrup, then mix again.
- Finely chop the strawberries, then gently fold them into the oatmeal batter.
- Pour the batter into an oven safe ramekin.
- Top the mixture with more strawberry pieces or slices.
- Bake the oatmeal for about 25 minutes, or until desired consistency is achieved.
- Top your strawberry shortcake oatmeal with vegan whipped cream.
- Dig in and enjoy!
