- 1/4 cup + 1 tbsp oats (blended into oat flour)
- 3 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
- 2 small fresh strawberries (plus more for topping)
- 1/4 tsp baking powder
- 4 1/2 tbsp nut milk
- 1 tsp pure maple syrup
- coconut whipped cream (for topping)
Preheat the oven to 350° F.
In a mixing bowl, combine the oat flour, vanilla protein powder, and baking powder.
Add the nut milk and pure maple syrup, then mix again.
Finely chop the strawberries, then gently fold them into the oatmeal batter.
Pour the batter into an oven safe ramekin.
Top the mixture with more strawberry pieces or slices.
Bake the oatmeal for about 25 minutes, or until desired consistency is achieved.
Top your strawberry shortcake oatmeal with vegan whipped cream.
