Good morning friends! I hope everyone is having a lovely day. I spent a good portion of yesterday preparing for a few very busy upcoming school weeks.
Still, I somehow found the time to take a break and bake up a delicious recipe in the kitchen – baked donuts. But these aren’t just any baked donuts. They are fluffy, moist, and packed with blueberry flavor. They also feature a delicious glaze, and they are (of course) completely vegan and dairy free.
These baked blueberry cake donuts turned out perfect, and I can’t wait for all of you to try them! Now, let’s take a look at some quick logistics for this recipe, along with the simple list of ingredients you will need to make these glazed blueberry donuts.
What Are Cake Donuts Made Of?
Cake donuts can be made from a wide variety of different ingredients. With these vegan baked cake donuts specficially, I stuck with simple ingredients for the base, such as oats and whole wheat flour. For moisture, creaminess, and sweetness, I added unsweetened applesauce, pure maple syrup, nut butter, and nut milk.
Vegan cake donuts are actually quite easy to make, especially if you have a good donut pan. I use a silicone donut pan, as I find that the donuts pop out more easily. Baked Vegan Blueberry Cake Donuts
Ingredients
Donuts
- 3/4 cup quick oats (blended into an oat flour)
- 1/2 cup + 2 tbsp whole wheat flour
- 1/4 cup + 2 tbsp fresh blueberries
- 2 tbsp coconut sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 cup nut milk (I used unsweetened vanilla almond milk)
- 3 tbsp pure maple syrup
- 2 tbsp creamy almond butter
- 1 tbsp unsweetened applesauce
Donut Glaze
- 1 tbsp powdered sugar
- 1/2 tsp nut milk (I used unsweetened vanilla almond milk)
Instructions
- Preheat the oven to 350° F.
- Add the oats, whole wheat flour, coconut sugar, baking powder, and baking soda to a mixing bowl.
- Mix all dry ingredients to combine thoroughly.
- Make a well in the center of the bowl, then add the nut milk, maple syrup, almond butter, and applesauce.
- Mix the liquid ingredients together, then combine the wet ingredients with the dry.
- Gently fold in the blueberries.
- Spoon the batter into a greased donut pan.
- Bake the donuts for about 25 minutes, or until a toothpick inserted comes out clean.
- Let the donuts cool completely, then remove them from the donut pan.
- In a small dish, combine the powdered sugar and nut milk to form a glaze.
- Add an equal amount of glaze on top of each donut.
- Place the donuts in the refrigerator to allow the glaze to harden.
- Dig in and enjoy your donuts!
