Grain Free Vegan Chocolate Chip Cookies
Good morning friends! Today, I am so excited to share a delicious chocolate chip cookie recipe with all of you. However, this isn’t just any chocolate chip cookie recipe. Many of you guys have been requesting grain free desserts recently, so I wanted to try and create the perfect grain free, soft baked chocolate chip cookie recipe to share with all of you. After testing and tweaking my recipe a few times, I finally achieved the perfect texture and taste that I was going for.
Also, these chocolate chip cookies are made with a secret ingredient – chickpea flour! It might sound a bit weird to put chickpeas in chocolate chip cookies, but I promise that the cookies taste delicious. I used the chickpea flour as the main dry base ingredient so that these cookies would be completely grain free, vegan, and gluten free. I used Bob’s Red Mill brand chickpea flour in this recipe, which was sent to me for free #gifted. I know you all are going to love this cookie recipe, so don’t knock it until you try it 🙂
Now, let’s discuss a few quick things to note for this recipe. Then, we will go through the list of ingredients you will need to make this vegan, gluten free, and grain free chocolate chip cookie recipe a smashing success!
How Do You Make Gluten Free Cookies?
In order to make gluten free cookies, you simply have to sub out the traditional flour for a gluten free alternative. There are a ton of different gluten free flours on the market to choose from, including almond flour, 1-to-1 gluten free baking flours, and the list goes on. For this recipe specifically, I chose to use chickpea flour so that these cookies would be both gluten free and grain free.
One of my go-to budget friendly gluten free flour options for baked goods is oat flour. However, in order to make this recipe grain free as well as gluten free, I had to use another option. Chickpea flour seemed like the perfect choice for this recipe. It might sound a bit weird, but I promise it’s really tasty in this recipe. Don’t knock it until you try it!
Now that we have covered some quick things to note for this recipe, let’s dive into the list of ingredients you’ll need to make these vegan, gluten free, and grain free chocolate chip cookies.
Grain Free Vegan Chocolate Chip Cookies – Ingredients
- Chickpea Flour – This secret ingredient is the first one you will need to make your cookie dough. The chickpea flour serves as the main dry base for this chocolate chip cookie recipe. It is vegan, gluten free, and grain free, which makes it perfect for this recipe. I used Bob’s Red Mill chickpea flour (which was sent to me for free #gifted).
- Coconut Sugar – The coconut sugar adds a ton of sweetness to these chocolate chip cookies. It is one of my favorite ingredients to use in vegan baked goods, especially cookies.
- Chocolate Chips – Of course, you can’t have chocolate chip cookies without the chocolate. You can use any kind you prefer or have on hand. I used dark chocolate chunks, but semi-sweet chocolate chips would also work.
- Baking Soda – This ingredient helps the cookies rise and achieve that soft baked texture that we are going for.
- Unsweetened Applesauce – The unsweetened applesauce adds a ton of moisture and some natural sweetness to these grain free chocolate chip cookies.
- Pure Maple Syrup – The pure maple syrup adds even more moisture and sweetness to these cookies.
- Melted Coconut Oil – The melted coconut oil adds moisture to these chocolate chip cookies to ensure that they don’t turn out too dry or crumbly. It is an essential ingredient that you definitely don’t want to forget.
- Nut Milk – The nut milk adds both moisture and creaminess to this chocolate chip cookies recipe. I used unsweetened vanilla almond milk, but you can use whichever kind you prefer or have on hand.
- Pure Vanilla Extract – The pure vanilla extract amplifies all of the other ingredients present in this chocolate chip cookies recipe. It is the perfect finishing touch.
