Preheat the oven to 350° F.
In a mixing bowl, combine the chickpea flour, coconut sugar, and baking soda.
Add the applesauce, pure maple syrup, coconut oil, nut milk, and vanilla extract.
Mix again until a sticky cookie dough forms.
Gently fold in the chocolate chips.
Divide the dough evenly into six pieces, then roll each one into a ball.
Place each dough ball on a greased or parchment lined baking sheet, leaving a bit of space between each one.
Shape each dough ball into a flat, round disc.
Add a few more chocolate chips on top of each cookie.
Pop the cookies in the oven to bake for about 8 - 9 minutes, until firm and golden brown.
