Grain Free Vegan Chocolate Chip Cookies

Delicious and moist chocolate chip cookies that are vegan, gluten free, and grain free.

Ingredients
  

  • 3/4 cup chickpea flour (I used Bob's Red Mill brand which was sent to me)
  • 1/4 cup coconut sugar
  • 2 1/2 tbsp chocolate chips (I used dark chocolate chunks)
  • 1/4 tsp baking soda
  • 2 tbsp unsweetened applesauce
  • 1 tbsp pure maple syrup
  • 1/2 tsp nut milk (I used unsweetened vanilla almond milk)
  • 2 tsp melted coconut oil (measure after melting)
  • 1/4 tsp pure vanilla extract

Instructions
 

  • Preheat the oven to 350° F.
  • In a mixing bowl, combine the chickpea flour, coconut sugar, and baking soda.
  • Add the applesauce, pure maple syrup, coconut oil, nut milk, and vanilla extract.
  • Mix again until a sticky cookie dough forms.
  • Gently fold in the chocolate chips.
  • Divide the dough evenly into six pieces, then roll each one into a ball.
  • Place each dough ball on a greased or parchment lined baking sheet, leaving a bit of space between each one.
  • Shape each dough ball into a flat, round disc.
  • Add a few more chocolate chips on top of each cookie.

  • Pop the cookies in the oven to bake for about 8 - 9 minutes, until firm and golden brown.
