Ingredients
  

  • 1/2 cup quick oats
  • 1/2 tsp ground flaxseed
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1/3 cup nut milk (I used unsweetened vanilla almond milk)
  • 3 tbsp canned pumpkin
  • 1 tsp pure maple syrup
  • 1 tbsp creamy peanut butter (for topping)
  • optional toppings (pure maple syrup, chopped pecans, etc.)

Instructions
 

  • Preheat the oven to 350° F.
  • Add all ingredients to a high speed blender or food processor.
  • Blend until a smooth batter forms.
  • Pour the batter into an oven safe dish or ramekin.
  • Bake the oatmeal for about 20 minutes, or until your desired consistency is achieved.
  • Add the peanut butter on top of your oatmeal.
  • Add toppings such as pure maple syrup and chopped pecans.
