- 1/2 cup quick oats
- 1/2 tsp ground flaxseed
- 1/4 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- 1/3 cup nut milk (I used unsweetened vanilla almond milk)
- 3 tbsp canned pumpkin
- 1 tsp pure maple syrup
- 1 tbsp creamy peanut butter (for topping)
- optional toppings (pure maple syrup, chopped pecans, etc.)
Preheat the oven to 350° F.
Add all ingredients to a high speed blender or food processor.
Blend until a smooth batter forms.
Pour the batter into an oven safe dish or ramekin.
Bake the oatmeal for about 20 minutes, or until your desired consistency is achieved.
Add the peanut butter on top of your oatmeal.
Add toppings such as pure maple syrup and chopped pecans.
