The best easy vegan lentil bolognese recipe made in one pot.

Ingredients
  

  • 1/2 cup whole green lentils (dry)
  • 1/2 cup white mushrooms (finely chopped)
  • 1/4 cup yellow onion (finely chopped)
  • 1/4 cup carrots (finely chopped)
  • 2 cloves fresh garlic (minced)
  • 1/2 tbsp nutritional yeast seasoning
  • 1/2 tsp finely chopped fresh basil leaves (plus more for garnish)
  • 1/2 tsp dried oregano
  • 1/4 tsp pepper
  • 1/4 tsp onion powder
  • salt to taste
  • 1 1/2 cups water
  • 1 1/2 cups crushed tomatoes (I like fire roasted)
  • 1/2 tbsp extra virgin olive oil

Instructions
 

  • Add the chopped onion and olive oil to a large pot over low to medium heat.
  • Sauté the onion for a few minutes until transluscent.
  • Add in the chopped mushrooms, chopped carrots, and minced garlic.
  • Sauté the vegetables for a few more minutes.
  • Add in the water, crushed tomatoes, lentils, and all the seasonings.
  • Bring the mixture to a boil, then turn the heat to low and simmer partially covered for about 40 minutes, or until the mixture has thickened and everything is soft.
  • Serve the bolognese over your favorite pasta or spaghetti squash.
    One Pot Vegan Lentil Bolognese
  • Top with optional fresh basil, nutritional yeast seasoning, and/or vegan cheddar style shreds (highly recommend!)
