Easy, vegan, gluten free friendly chocolate orange baked oatmeal.

- 1/3 cup rolled oats
- 1 scoop chocolate protein powder (1 scoop = 23 grams, I used Orgain creamy chocolate fudge protein powder)
- 1/2 tbsp chocolate chips (I used Enjoy Life dark chocolate chips)
- 1/4 tsp baking powder
- 6 segments seedless mandarin orange
- 1/4 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
Preheat the oven to 350° F.
Add the oats, chocolate protein powder, baking powder, 3 orange segments, and nut milk to a high speed blender or food processor.
Blend for a few minutes until a smooth oatmeal batter forms.
Gently fold in the chocolate chips.
Pour the mixture into a an oven safe dish or ramekin.
Top the oatmeal with the orange slices and a few more chocolate chips.
Bake for about 20 minutes, or until a toothpick inserted comes out clean.
