No Bake Frozen Smoothie Cereal Bars

Ingredients
  

Cereal Base Layer

  • 2 cups cereal (I used Trader Joe's O's)
  • 2 tbsp creamy peanut butter
  • 2 tbsp pure maple syrup
  • 2 tbsp nut milk (I used unsweetened vanilla almond milk)

Frozen Smoothie Layer

  • 2 medium frozen bananas
  • 1/4 cup powdered peanut butter (I used PBFit)
  • 1 tbsp nut milk (I used unsweetened vanilla almond milk)

Peanut Butter Swirl Topping

  • 1 tbsp creamy peanut butter

Instructions
 

  • Add the cereal, maple syrup, 2 tablespoons of peanut butter, and 2 tablespoons of nut milk to a high speed food processor.
  • Process until a thick, sticky dough forms.
  • Form the cereal base layer by pressing the dough onto a parchment lined rectangular/square pan.
  • Freeze the cereal base layer for 10 minutes.
  • Make the frozen smoothie layer by blending the frozen bananas, powdered peanut butter, and 1 tablespoon of nut milk in a high speed food processor for a few minutes, or until a thick and creamy consistency is achieved.
  • Spread the smoothie mixture out in an even layer on top of the cereal base layer.
  • Add the other tablespoon of peanut butter on top of the smoothie layer and use a toothpick to make a swirl design.

  • Freeze the mixture for about 20 - 30 minutes, or until firm.
    Vegan Frozen Smoothie Cereal Bars
  • Cut the mixture into eight rectangular bars.
