- 2 medium overripe bananas
- 1 cup oat flour
- 2 tbsp semi-sweet chocolate chips (I used Enjoy Life minis)
- 2 tsp cinnamon
- 1 tsp baking powder
- 1/4 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
- 2 tbsp creamy natural peanut butter
- 2 tbsp unsweetened applesauce
- 1 tbsp pure maple syrup
Preheat the oven to 350° F.
Combine the oat flour, cinnamon, and baking powder together in a large mixing bowl.
In a separate bowl, mash the bananas.
Add the nut milk, applesauce, peanut butter, pure maple syrup, and mashed bananas to the dry mixture, and mix well to combine.
Gently fold in the chocolate chips. Save a few for topping your muffins off with if desired.
Divide the batter evenly between six cavities of a lined or greased muffin pan.
Bake the muffins for 25 minutes, or until a toothpick inserted comes out clean.
