- 1 can garbanzo beans (15 oz, drained and rinsed thoroughly)
- 3 pitted medjool dates
- 2 tsp cinnamon
- 3 tbsp almond milk (I used unsweetened vanilla)
- 1 1/2 tbsp pure maple syrup (or more to taste for extra sweetness)
- 1 1/2 tbsp creamy peanut butter
- 1 tsp pure vanilla extract
Soak dates in warm water for about 5 minutes to soften.
Add all ingredients to a food processor.
Blend until a smooth consistency is achieved, stopping occasionally to scrape down sides if necessary to aid blending.
Transfer mixture to a bowl and refrigerate overnight to chill. This hummus tastes so much better after it has time to set!
Serve up with graham crackers, pretzels, fresh fruit, or whatever else you'd like!
