ground flaxseed

pumpkin pie spice

nut milk
(I used unsweetened vanilla almond milk)

canned pumpkin

creamy peanut butter

pure maple syrup
(plus more for topping)
powdered sugar
(optional, for topping)
Instructions
Add the nut milk, canned pumpkin, pure maple syrup, ground flaxseed, and pumpkin pie spice to a wide shallow dish.
Whisk all the ingredients together well to combine.
Take one piece of bread and dip both sides of it in the French toast batter, coating each side thoroughly and evenly.
Repeat with the remaining slices of bread.
Place the coated bread slices on a greased pan or pancake griddle over low to medium heat.
Cook the French toast for about 5 minutes on each side, until golden brown and firm on the outside.
Plate the French toast.
Top the French toast with the chocolate chips, peanut butter, a drizzle of pure maple syrup, and a bit of powdered sugar if desired.
