Ingredients
  

  • 2 - 3 pieces hard or stale bread (I used sourdough)
  • 1 tbsp vegan semi-sweet chocolate chips
  • 1 tsp ground flaxseed
  • 1/4 tsp pumpkin pie spice
  • 1/4 cup nut milk (I used unsweetened vanilla almond milk)
  • 2 1/2 tbsp canned pumpkin
  • 1 tbsp creamy peanut butter
  • 1/2 tbsp pure maple syrup (plus more for topping)
  • powdered sugar (optional, for topping)

Instructions
 

  • Add the nut milk, canned pumpkin, pure maple syrup, ground flaxseed, and pumpkin pie spice to a wide shallow dish.
  • Whisk all the ingredients together well to combine.
  • Take one piece of bread and dip both sides of it in the French toast batter, coating each side thoroughly and evenly.
  • Repeat with the remaining slices of bread.
  • Place the coated bread slices on a greased pan or pancake griddle over low to medium heat.
  • Cook the French toast for about 5 minutes on each side, until golden brown and firm on the outside.
  • Plate the French toast.
  • Top the French toast with the chocolate chips, peanut butter, a drizzle of pure maple syrup, and a bit of powdered sugar if desired.
