- 1/2 cup black beans (drained and rinsed)
- 1/2 cup cooked brown rice
- 1/4 medium green pepper (thinly sliced)
- 1/4 medium red pepper (thinly sliced)
- 2 tbsp yellow onion (chopped)
- 2 tbsp chopped avocado
- 1 1/2 tbsp salsa
- 1/4 tsp garlic powder
- 1/8 tsp chili powder
- 1/8 tsp cumin
- freshly squeezed lime juice (optional)
- salt to taste
Add the sliced bell peppers, chopped onion, garlic powder, chili powder, and cumin to a pan with a bit of olive oil.
Cover the vegetables with a lid and cook over low-medium heat until soft (about 15 minutes), stirring occasionally.
Add the rice, beans, salsa, vegetables, and avocado to a bowl or plate.
Add salt and fresh lime juice to taste.
Sprinkle on some vegan cheese shreds or nutritional yeast seasoning if desired.
